摘要: The present invention provides a combination continuous and batch filtration system for a recirculating fryer where the continuous filter and batch filter assemblies are integrated into a single unit, utilizing a common pump. This unit is substantially compact and is therefore able to fit within the frame of most recirculating fryers. The outlets of the continuous filter and the batch filter are connected to a two-way valve, which is, in turn, connected to the inlet of the common pump. The valve allows an operator to selectively pump cooking fluid from either the continuous filter or the batch filter back into the fryer vat.

摘要: Disclosed are an improved method and apparatus for heating which enables rapid heating of foods to obtain any one of a number of textures. A fried taste, texture and appearance can be achieved without using large amounts of oil or encountering the other disadvantages of frying.According to a preferred embodiment, the form of the apparatus is employed to fry foods using a heat exchange fluid comprising air containing dispersed cooking oil or fat, which performs the disclosed method. A cooking chamber is provided having a reservoir at a low point capable of holding cooking oil. The oil is dispersed into the closed heating chamber as a convective air flow is established within the heating chamber. A rotating support holds the food about an axis accentrically positioned from the axis of an impeller means which disperses the oil or fat and creates a positive flow of air within the chamber, to uniformly contact and fry the food.

The bulk material processing system also includes a heating assembly including a first heater configured to generate heat at a first heating zone on the conveyor surface, and a coating application assembly including a first coating source configured to provide a first liquid coating to a first spray nozzle configured to spray the first liquid coating onto a portion of the plurality of constituents of the bulk material in the first heating zone while the first heater is activated.

摘要: Sheeted or relatively thin uncooked food products are arrayed for reception upon a procession of curved molds being conveyed along a process path. Once received on the molds and moving therewith, the products are deluged from above with curtains of hot cooking oil and thereby take the shape of the molds while cooking. The food products are dismounted from the molds at the end of the process path and are moved to a subsequent treatment station.

摘要: A fryer for food products such as battered and breaded pieces of meat has a main conveyor with forward and return belt paths inside the fryer pan, the belt return dragging the pan bottom sweeping fines to one end for removal. A submerger conveyor prevents products from floating in the cooking oil which enters the fryer from above through oil inlet weirs. A plurality of weirs supply curtains of hot cooking oil in non-turbulent flow onto the food product covering the product as the product is conveyed on the main conveyor. The cooking oil is returned along defined lanes in the pan for reheating outside of the fryer. The food products are removed from the fryer in a cooked condition with the bread coatings intact.

摘要: Disclosed are an improved method and apparatus for convection heating which enables rapid heating of foods to obtain a fried taste, texture and appearance without using large amounts of oil or encountering the other disadvantages of frying.According to a preferred embodiment of the apparatus which performs the disclosed method, a cooking chamber is provided having a reservoir at the bottom capable of holding cooking oil or other liquid heat exchange medium. The oil is continuously dispersed into the heating chamber which is preferably closed and sealed as a convective air flow is established within the heating chamber by either rotating a foraminous support which holds the food or by causing a positive flow of air within the chamber by means of air circulating means.Because the heat transfer capability of the convective heating is improved by maintaining a dispersion of liquid heat exchange medium within the air, the heating capability of the apparatus is improved as compared with conventional convective heating. Because of the intimate contact of the hot oil and the rapid cooking, a characteristic fried texture and flavor is achieved. And, because the oil or other liquid cooking medium is employed as a dispersion which can be recirculated according to the preferred embodiments, the amount of cooking oil required according to the invention is much less than in conventional frying operations.

摘要: Frying apparatus including a fry pot and a filter system operable during a cleaning cycle for dislodging food particles which cling to the fry pot and for removing food particles suspended in the cooking oil is disclosed. The filter system includes a shower apparatus which discharges jets of cooking oil along the interior side surfaces of the fry pot to dislodge food particles clinging thereto. The cooking oil is drained into a drain pan, strained through a filter and means are provided for pumping the filtered cooking oil back to the fry pot where it is discharged through the shower apparatus. Food particles are continuously separated from the cooking oil as it is conveyed from the fry pot through the filter into the drain pot. In a preferred embodiment, a control circuit is provided for automatically turning off the fry pot heaters when the cooking oil is drained during the filter cycle. The control circuit includes means for locking the fry pot heating system in the off condition when the draining operation occurs. Reset is accomplished by first turning the fry pot off and then back on to insure that the operator exercises positive control before the heating system is energized.
