    摘要: Apparatus for producing and dispensing an aerated product comprises a mixer which has a first inlet for receiving a fluid, a second inlet for receiving a gas, and an outlet. A relatively long continuous turbulence passage of relatively small cross section has one end positioned to receive the effluent from the mixer outlet and its other end spaced from the mixer outlet so that the effluent is subjected to confined turbulent mixing in the turbulence passage until the fluid product is discharged from the passage other end. If that product is to be cooled, the turbulence passage leads to a cooling area which cools and at least partially freezes the fluid product issuing from that passage. A method of producing the product is also disclosed. The invention has particular application to the making and dispensing of frozen yogurt and ice cream and allows for the service of individualized fresh portions in a variety of flavors and with little required cleaning.

    摘要: A freezer system which partially freezes food products through conductive heat transfer with rotating contact freezers prior to complete freezing of the food products in an enclosed convection freezer. Food products sequentially contact outer surfaces of two rotating contact freezers, which partially freezes the food products to first and second predetermined depths. The partially frozen food products then enter an enclosed convection freezer for complete freezing. Partial freezing of the food products prior to a complete freeze of the food products provides for a greatly increased rate of production of high quality frozen food products.

    摘要: A process for producing an ice, comprising the steps of allowing a material solution containing a sweetener to flow downward from the upper part of and along the surface of a freezing plate provided substantially upright, to thereby cause the material solution to freeze on and stick to the surface of the freezing plate to form an ice plate; breaking the ice place into ice pieces having a diameter of about 20 mm at maximum; and filling a container with the ice pieces. The material solution is so controlled as to flow down in such a quantity that at least 30% of the solution freezes on and sticks to the freezing plate before the solution reaches the lower end thereof, and has a concentration so adjusted that the ice plate has a fragmentation resistance of 1,000 mm or less as measured by the dropping test method.

    摘要: A method serves to deposit a continuously extruded formation or string of an edible product, such as an ice cream formation upon a continuously driven conveyor for a plant for treating the product. In order to be able to deposit the formation discontinuously upon a conveyor consisting of trays, the formation is extruded upon an endless depositing band driven by means of a driving device with contant speed which is slower than the speed of the conveyor. The depositing band is driven around an end reversing location arranged above the container and the end reversing location is moved with respect to the driving device of the depositing band in the same direction as the direction of movement of the conveyor and with a speed which at least is equal to the speed with which the depositing band is driven by means of its driving device. Then the movement of the end reversing location is reversed with respect to the driving device of the depositing band and a formation portion is being deposited upon the conveyor. Then the movement of the end reversing location with respect to the driving device for the depositing band is stopped and the formation is severed at the end reversing location, whereafter the latter is moved with respect to the driving device of the depositing band as indicated, whereafter the movements mentioned as regards the end reversing location and the severing are repeated. An apparatus is provided for carrying out the method.

    摘要: An apparatus for freezing confection material includes a plurality of separate mold strips which are indexed in a closely spaced single file over several longitudinally spaced, transversely extending rows of nozzles. Coolant is forced upwardly from the nozzles in single vertical jets which impinge perpendicularly against the mold strips midway between adjacent mold cups. The mold cups are arranged with their wide side faces extending in their direction of travel, and the single jets of coolant impinge upon wall portions of the mold strips which extend transversely between such opposing wide side faces. The heat exchanger for refrigerating the coolant includes a vertically super-imposed array of heat exchanger tubes that is located directly under the mold cups so that the coolant will drip from the mold cups onto the heat exchanger tubes. The coolant then cascades from upper to lower heat exchanger tubes and is refrigerated by the time it trickles into a collection housing situated below the heat exchanger. Mechanical seals are formed between the adjacent mold strips by intermeshing end walls of the mold strips; the seals enable the coolant to be continuously sprayed without concern that the coolant may be injected upwardly between the strips to contaminate the confection material.

    摘要: A method and apparatus for congealing liquids wherein a refrigerating fluid carries heat away from one side of a heatconducting wall and a congealed layer is formed on the other side of the wall. The amount of refrigerating liquid supplied to the wall surface is reduced when the congealed layer builds up sufficiently to produce a major heat transfer bottleneck. The apparatus has a freezing cylinder drum which rotates in a body of water with its top portion above the water surface where an internal roller deflects the cylindrical drum and peels the ice free. The ice contains a low concentration of boron which is substantially identical with the concentration of boron in the water.
