摘要： It is disclosed that polyoxyethylene-sorbitan-mono-oleate (Polysorbate 80, Tween 80®, CAS Registry Number: 9005-65-6) may be substituted with diacetyl tartaric acid esters of mono- and di-glycerides (DATEM, CAS Registry Number: 100085-39-0) as a yield enhancing agent in fermentation media for lactic acid bacteria. An improved method for preparing a lactic acid bacteria culture is also disclosed as well as the use of such cultures for the manufacturing of food, feed and pharmaceutical products.
