Flavor stability and/or textural stability of food products are surprisingly improved by incorporation of cyclodextrins in the food product. The cyclodextrins, preferably alpha cyclodextrins are incorporated in and/or on the food product. Preferably, the cyclodextrin is provided in a hydrated form in combination with a fat. Methods of making food products, compositions, methods of using compositions and methods of formulation are provided.

Methods for the reduction of serum cholesterol levels in a mammal involve the consumption of a grain product having an enhanced soluble fiber content due to hydrolysis of insoluble dietary fibers in the grain product. Desirable approaches for the hydrolysis of grain products are described that result in an increase in the soluble fiber content. Some approaches for grain fiber hydrolysis result in a product with low levels of lysinoalanine. The grain products generally have high fiber grain brans, such as wheat bran. The grains products can be consumed as breakfast cereals. Similarly, flours including the hydrolyzed grain products can be incorporated into baked goods and the like.

The present invention is related to a novel component for use in a consumer food product that aids in providing beneficial hypocholesterolemic effects. More specifically, the present invention is directed to the use of alpha-cyclodextrin in the preparation of food products to lower harmful cholesterol levels. The food product provides beneficial hypocholesterolemic activity through increased bile acid and lipid binding activity while simultaneously delivering a food product, which is not adversely affected by its inclusion, either in taste or texture or in any undesirable side effects. The invention is also directed to communicating the benefit of the particular food product.

A food product having enhanced cholesterol of triglyceride lowering properties comprising components that provide an increased affinity for binding bile acids. A first component is a starch selected from the group of cyclodextrins (beta, alpha or gamma cyclodextrins). A second component can be a dietary fibre such as a beta glucan or a sterol based compound such as sitosterol, stigmasterol or campesterol. The composition may be grain based with enhanced hypocholesterolemic properties. It may also comprise micro- and macro-nutrients (vitamins, minerals..) to provide a well-balanced food product that should be palatable and have a good mouth feel and texture. As an example cyclodextrins may be included in ready to eat cereals, mixes doughs and grain based food.

The present invention relates to a novel treatment composition for use in treating food products and food intermediates. The treatment composition may be used in single, home use settings as well as commercial applications for larger scale treatment of food products in the course of manufacture. The treatment composition of the present invention uses at least one of alpha-cyclodextrin, beta-cyclodextrin, gamma-cyclodextrin or combinations and modified derivatives thereof along with a suitable carrier such as in an aerosol, liquefied mister and the like.
