Die vorliegende Erfindung betrifft eine Vorrichtung, ein System sowie ein Verfahren zum Zerschneiden eines Lebensmittelbandes, insbesondere zum Längsschneiden eines Käsebandes in Streifen, aufweisend: eine Längsschneidevorrichtung (45) an die das Lebensmittelband (50) mit einer Transportgeschwindigkeit in einer Transportrichtung herangeführt wird, wobei die Längsschneidevorrichtung (45) umfasst: eine Nutenwelle (1) mit einer quer zur Transportrichtung angeordneten Nutenwellenachse (10), wobei eine Vielzahl an Nuten (5) die Nutenwelle (1) in Transportrichtung des Lebensmittelbandes (50) umlaufen, wobei die Nutenwelle (1) eingerichtet ist, das herangeführte Lebensmittelband (50) zu übernehmen, eine Schneidewelle (20) mit einer quer zur Transportrichtung angeordneten Schneidewellenachse (25), wobei eine Vielzahl von Schneidemessern (30) die Schneidewelle in Transportrichtung des Lebensmittelbandes (50) umlaufen, wobei die Schneidewelle (20) gegenüber der Nutenwelle (1) angeordnet ist und das Lebensmittelband (50) zwischen der Schneidewelle (20) und der Nutenwelle (1) geführt wird und dass jeweils ein Schneidemesser (30) geringfügig in eine gegenüberliegende Nut (5) eingreift und dadurch das Lebensmittelband (50) entlang der Transportrichtung in Streifen geschnitten wird.

This invention relates to a system to remove at least a portion of an outer layer of a food product, comprising: a processing device to remove at least a portion of the outer layer of the food product; a measurement system configured to measure the shape or outer contour of the food product, wherein the measurement system is also configured to measure at least one parameter of the food product other then shape or outer contour of the food product, and wherein the system is configured to remove at least a portion of the outer layer of the food product with the processing device based on the measured shape or outer contour of the food product and based on the at least one other parameter of the food product.

The present invention is directed to a method and apparatus for forming a continuous sheet (15) of a molten material with particularly viscous, sticky properties. This molten material may be moldable, plasticized or a food product such as cheese. More specially, the invention includes a manifold (11) that discharges the molten material (15) in a continuous layer upon the surface of a casting belt (12). This manifold (11) comprises a roller (16), a chamber (22) with hollow interior, at least one inlet (29) and a drive mechanism.

The present invention relates to devices and methods for cutting a cubic or cuboid block of cheese, contained in a container being open at the top. The cutting device of the present invention comprise an elongate vertical shaft and one or more horizontal extending knives extending out from the vertical shaft. The cutting device of the present invention is configured to move and rotate within at least two vertical planes within the block of cheese in a pre-determined sequence, thereby cutting the block of cheese in one or more horizontal planes.

An apparatus for shredding a product includes a housing (304) having an interior space bounded by a generally cylindrical sidewall (308) that can include one or more contoured segments (326). The housing further includes a cutting implement (330), preferably also contoured, following the contoured segment, with an opening (334) in the sidewall between the contoured segment and the cutting implement that follows it. Preferably, the contours (332) of the cutting implement are different from the contours (328) of the segment that the cutting implement follows. The apparatus further includes a feed hopper (312) through which a product to be shred is fed to the interior space of the housing, an impeller (314), including at least one impeller paddle (320), mounted for rotation within the housing about a substantially horizontal axis of rotation, and a driving mechanism (338) coupled to the impeller for rotating the impeller. The product is slid along the inner periphery of the housing by the impeller, at such a speed that centrifugal force keeps the outer face of the product pressed against the inner periphery. As the product passed by a cutting implement, a plurality of shreds are cut from the outer face of the product and discharged from the housing.
