    Abstract: 본 발명은 커피체리를 이용한 커피와인의 제조방법에 관한 것으로 (A) 파치먼트와 상기 파치먼트를 감싸는 외과피로 이루어진 커피체리를 으깬 후 가수하여 고형분이 40 내지 60 brix가 되도록 하는 단계; (B) 상기 으깬 커피체리에 누룩을 투입하여 1차 발효시키는 단계; (C) 상기 1차 발효된 커피체리에 효모를 투입하여 2차 발효시키는 단계; (D) 상기 2차 발효된 커피체리를 여과하여 여과물과 여과액으로 분리하는 단계;를 포함하여 상기 여과액으로 커피와인을 수득하며, 상기 여과물로는 발효커피콩을 수득할 수 있다.

    Abstract: With the invention, it is possible to commercialize Streptococcus thermophilus and Lactobacillus bulgaricus bacteria, which are naturally found in local village yogurts in Anatolia, after isolation and purification, and with a process designed for the use of starter cultures containing different combinations of these bacteria, creamy yogurt, homogenized yogurt, fermented milk products such as yogurt and ayran with different fat/dry matter contents are produced. With the invention, by using completely natural isolates isolated from yogurt taken from the local villages of Anatolia, which does not have any modifications; a sustainable method has been developed that can be applied industrially within the scope of mass production and is suitable for the standard structure and taste that consumers in our country want to see in yogurt. With the invention, natural fermented milk products are produced with starter cultures known as yeast/living yogurt cultures in colloquial language and TGK Nutrition and Health Declarations Regulation.

    Abstract: The present invention is directed to a method of producing a Streptococcus thermophilus strain comprising the steps of a) Providing a mother strain in the form of Streptococcus thermophilus DSM32502, b) Growing a culture of the mother strain in the presence of a bacteriophage, to which the mother strain is not resistant, to obtain a number of mutant strains, which are resistant to the said bacteriophage, c) Measuring the acidification time of the bacteriophage-resistant mutant strains and the mother strain in a milk base and selecting at least one mutant strain with a reduced acidification time as compared to the mother strain to obtain a fast-acidifying mutant strain.
