The invention relates to a method for producing milk having an increased melatonin content or milk products thereof. According to said method, the daily rhythm of mammals is divided into a day phase and a night phase, and the animals are milked at least once during the night phase in order to obtain milk having an increased melatonin content. At least one light source emitting substantially no light in the wavelength range below 500 nm is used for the light regime during the night phase. The obtained milk can be processed into milk products, especially milk power, having a high melatonin content. The obtained milk products including the milk are suitable as or for food, dietary supplements, or medicaments.

The present invention relates to novel polypeptides which are variants of Bile Salt-Stimulated Lipase (BSSL; EC 3.1.1.1). It also relates to DNA molecules encoding the said polypeptides, and to subproducts comprising the said DNA molecules. The invention further relates to processes for producing the said BSSL variants and for producing transgenic non-human mammals capable of expressing the BSSL variants. Furthermore the invention relates to such transgenic animals as well as to infant formulas comprising milk from such transgenic animals. The invention also relates to pharmaceutical compositions comprising the said polypeptides; and the use of the said polypeptides and DNA molecules for the manufacture of medicaments.

The invention provides hydrolases, polynucleotides encoding them, and methods of making and using these polynucleotides and polypeptides. In one aspect, the invention is directed to polypeptides, e.g., enzymes, having a hydrolase activity, e.g., an esterase, acylase, lipase, phospholipase (e.g., phosphlipase A, B, C and D acitvity, patatin activity, lipid acyl hydrolase (LAH) activity) or protease activity, including thermostable and thermotolerant hydrolase activity, and polynucleotides encoding these enzyme, and making and using these polynucleotides and polypeptides. The hydrolase activities of the polypeptides and peptides of the invention include esterase activity, lipase activity (hydrolysis of lipids), acidolysis reactions (to replace an esterified fatty acid with a free fatty acid), transesterification reactions (exchange of fatty acids between triglycerides), ester synthesis, ester interchange reactions, phospholipase activity and protease activity (hydrolysis of peptide bonds). The polypeptides of the invention can be used in a variety of pharmaceutical, agricultural and industrial contexts, including the manufacture of cosmetics and nutraceuticals. In another aspect, the polypeptides of the invention are used to synthesize enantiomerically pure chiral products.

An immune milk preparation for prophylactic use against otitis derived from cow immunised with bacteria such as Heamophilus influenzae (non-type b), Streptococcus pneumoniae, Branhamella (moraxella). The preparation contains IgG against bacteria causing otitis. Antibodies specific for bacteria causing caries (e.g. Streptococcus mutans, Streptococcus sobrinus) may be supplemented to prevent caries. Administration of the preparation may be done with a dummy-like device.
