A biscuit, cookie or the life and method of manufacture of same includes forming a quantity of unbaked dough into a shaped, unbaked dough piece. A network of lines comprising grooves is impressed into the upper surface of the unbaked dough piece, either in conjunction with or subsequent to forming of the dough piece. A major portion of the lines in the network are non-terminated lines which continue across the surface of the dough piece and intersect either the edge of the dough piece or another line, and a minor portion of the lines are terminated lines which end short of either the edge or another line at least at one end thereof. The shaped dough piece with the network of impressed lines is baked under such conditions as to increase its diameter by from one-tenth to one-half and to form superficial fissures along at least some of the impressed lines and at least in some of the areas of the upper surface of the dough piece upon which lines were not previously impressed. The baked product is of sufficiently uniform thickness to allow at least ten of such products to be stacked and the top surface of each product is fissured randomly and individually distinctive from other products made from the same materials by the same method.

The process comprises: a) preparing a flowable batter comprising at least one cereal flour and water, the batter comprising not less than 20% by weight cereal flour and not more than 15% by weight sugar, based on the total batter weight excluding water; the batter having a viscosity at 20 °C of from 20 to 80 Pa sec; b) placing an aliquot of the batter onto a lower plate; c)permitting the batter to flow outwardly over the curved plate to form a curved body; d) applying to an upper surface of the batter an upper plate of a configuration generally conforming to that of the lower plate; e) cooking the batter for a period of time; and f) removing cooked pieces (1).

The rollers (10, 11) push the dough into the grooves (10a, 11a) and form the dough into a lattice comprising an array of ridges imparted to the dough by one of the rollers, which ridges are spaced apart from each other and extend in substantially the same direction as each other, and an array of ridges imparted to the dough by the other roller, which ridges are spaced apart from each other and extend in substantially the same direction as each other, the direction in which the ridges of one array extend being at an angle to that of the other array so that the ridges of one array intersect the ridges of the other, and the contacting portions of the curved surfaces (10b, 11b) of the rollers provide apertures in the dough between the intersecting ridges. The process further comprises cutting portions from the dough lattice and baking the portions to provide food products having a lattice configuration.

A layer of viscous coating material (3) is applied to a second support surface (12) and food products (1) together with the coating material adhering to them are removed from the first support surface (2) and placed on the second support surface. The coating material (3) on the second support surface (12) adheres to the partially coated food products (1) and, where it meets them, unites with the coating material applied to the food products when they were on the first support surface (2), so that each food product is enrobed in the coating material.
