The invention consists of the selection of non-diabetogenic milk producing cows and recovering and processing their milk and milk products. Another aspect of the invention is selectively breeding cows which produce the non-diabetogenic milk.

The complete structure of human milk BAL cDNA is disclosed. The nucleotide sequences of the cDNA inserts of two clones overlap and together contain 2951 base pairs of BAL cDNA which codes for an open reading frame of 720 amino acid residues between initiation and termination codons. There is a putative signal sequence of 20 residues which is followed by a 61-amino-terminal sequence of BAL. The cDNA sequence also contains a 678-base 5'-untranslated sequence, a 96-base 3'-untranslated region, and a 14-base poly(A) tail. The deduced BAL protein structure contains in the carboxyl-terminal region fourteen repeating units of 11 amino acids each. The repeating units have the basic structure of Pro-Val-Pro-Pro-Thr-Gly-Asp-Ser-Gly-Ala-Pro-, with only minor substitutions. The cDNA is useful for expression of protein, study of structure, function and the effect of modification or deletion or addition of amino acids, including entire repeating units, and as probes for studies involving BAL or related lipases, including rat pancreatic lysophospholipase, cholinesterase, and acetylcholinesterase.

The present invention provides the lactose-containing food compositions for infants for improving the stool color of infants closer to that of breast-fed infants, which comprises the lactose-containing foods for infants of which the only protein source is substantially cow's milk protein and/or a processed product of cow's milk protein modified to be administered to infants, and raffinose added into the foods for infants at a ratio of at least 0.05% (by weight) in a ready-to-use state. This food composition provides foods for infants more suitable for infant growth (infant formula, protein hydrolyzed formula, formula for low-birth-weight infants, follow-up formula, etc.) without causing a green stool which is observed when administering a conventional food for sucking infants, of which the only protein source is substantially cow's milk protein and/or a processed product of cow's milk protein.

The use of a physiologically innocuous ammonium compound and/or urea as an additive to an infant formula or a pap or for the preparation of a pharmaceutical composition for the prophylaxis of sudden infant death syndrome (SIDS) is disclosed as is also an infant formula or a pap which in addition to conventional ingredients contains a physiologically innocuous ammonium compound and/or urea. Furthermore, a method of preventing SIDS is disclosed, which method comprises administering to the infant an infant formula or a pap as indicated above, and a method for the prophylaxis of SIDS, wherein a pharmaceutical composition containing a physiologically innocuous ammonium compound and/or urea is administered to the infant or the appropriately selected or modified non-pathogenic, urease-producing bacteria are supplied to the gastrointestinal tract of the infant. Finally a method for the diagnosis of the risks for SIDS is disclosed according to which method the faeces of the infant are analyzed with respect to the presence of urea, urease activity and/or ammonium ions, the presence of urea, the absence or abnormally low urease activity and ammonium ion, respectively, indicating risks for SIDS.

A milk or other dairy product, capable of minimising the onset of disease such as coronary heart disease or enhancing the immune response is derived from animals which are substantially free of the β-casein A1 allele. Bulk milk can be produced by testing for and culling cows who test positive for the β-casein A1 allele, or by producing immunoglobulins and other immune response proteins, in cow's milk from animals not possessing the β-casein A1 allele, or other commercial milk pruducing animals, to this allele, to counteract the immunosuppressant substances present that are produced from it, in commercial milking cows such as Holsteins, together with its blending with non-treated milk or the recovery of such immunoproteins.
