摘要: The present disclosure provides methods and systems for mitigating finished product temperature transients caused by changes in product flow, raw product temperature, or other disturbances in an aseptic sterilization process. The methods and systems include applying an energy balance feedforward control scheme to the aseptic sterilization process to compensate for raw product temperature changes and changes in product flow. The methods and systems prevent damage to a finished product from occurring based on adverse transient temperature responses of heaters and coolers in an aseptic sterilization process.

摘要: A family of novel thermal processing media has been designed for optimized food and drink processing. These media composed solely of compounds approved to contact food, are essentially free of water, do not change state at any point in the process, remain corrosion-free throughout their useable life. While in combination with novel processing apparatus and methodologies, food and drink products requiring any heating, holding or cooling can be processed within the same equipment configurations essentially with no/minimal need for additional pressurization, the use of unheated modified atmospheres, in conjunction with these novel media, can be used to change or control the atmospheres within containers, especially polymer based containers at specific locations within the processing cycle. It further relates to using different media compositions for each processing stage modified to optimize the thermal conductivity and thermal diffusivity properties of the foodstuff being processed, minimizing costs and maximizing quality.

摘要: Apparatus and method for enhancing the flexibility and increasing throughput capacity while reducing cost and improving the quality of food and drink products within a continuous sterilization system using novel product carriers, in conjunction with unique user controllable product rotation and agitation features, capable of handling novel as well as existing product containers, are described. A further aspect of the invention is a property of the uniquely designed product carrier to accommodate and optimally orientate said product containers. A final aspect of the invention is the further capability of individual product carriers to undertake any user-defined processing program including product pasteurization or product stabilization or product sterilization within an essentially continuous sterilization system.

摘要: The present invention refers to a new process for preservation of different foods which secures to the processed food an extended shelf life, which can be extended in up to five years without the addition of preservatives, and the use of freezing or cooling. The referred to process further allows keeping the natural characteristics of the processed food, such as flavor and texture. The process for preserving different foods of the present invention comprises the steps: a. Packing food in a package; b. Heating the food / package system keeping the food in contact with the atmospheric air external to the package; c. Changing the gaseous composition inside the package containing food; d. Closing / sealing the package containing food; e. Thermal treatment of the closed / sealed package containing food; and can be used for several types of foods comprising, among them, fish, seafood, poultry, meat, pork, cold cuts, pastes, pasta, cereals, vegetables, fruits, dairy products, ready food, desserts or mixtures thereof.

摘要: In one embodiment of an apparatus and process for packaging foodstuffs or other materials in a rigid container sealed by a flexible cover, a desired quantity of material to be packaged containing or together with some water or other liquid is placed in the container, the flexible cover is secured on the container so as to leave at least one unsealed opening, the container is heated and/or placed in a partial vacuum to bring the liquid above its boiling point to cause or permit vapor generated by the boiling liquid to expel other gases from the container through the unsealed opening, and the container is sealed while gas or vapor is still flowing out of the container through the unsealed opening.
