In the removal of internal bones in a fore-end of a split carcass the shank bone, the humerus bone and the shoulder blade are cut free by machine, so that subsequently they can easily be removed from the rest of the fore-end. A transport tool (27a) is brought to grip around the free end of the shank bone. The fore-end is then pulled past cutting tools (1, 9, 15) by means of the transport tool, and the cutting tools (1, 9, 15) hereby perform cutting operations along the shank bone, the humerus bone and the shoulder blade guided by these bones, so that the bones are at least partially cut free from the rest of the fore-end. The articulations between the shank bone and the humerus bone, and the connections of the humerus bone to the shoulder blade are maintained at least partially unbroken during the cutting operations, so that the tractive force from the transport tool (27a) by the grip of the tool round the free end of the shank bone is transferred to the bones via their unbroken connections.

The present invention relates to a method of boning a fore end. The method comprises orientation and fixation of the fore end (1), determining the position of an anatomical fixed point (F 1 , F 2 , F 3 ), related to a part of a bone in the fore end, and positioning a tool (4 1 , 4 2 , 4 3 ), in relation to the anatomical fixed point. The tool is then moved in to the part of the bone which is gripped by the tool. Guided by the bone (6, 9, 11), a cutting operation is performed, e.g. starting from the said part of the bone. During this operation the tool retains its grip around the part of the bone. Finally, the bone is removed from the fore end by means of the tool, which then releases the bone. The method can be used for mechanical boning of fore ends, except for the removal of the humerus bone. The neck bone (5), the ribs (7), and the chest bone (8), the shoulder blade (9) and the shank bone (11) can be removed in a coherent process.

Ce procédé de désossage d'un quartier arrière d'animal de boucherie comprend les étapes suivantes : - le quartier (Q) se trouvant suspendu à un premier crochet (6) inséré dans la fente (q) qui sépare le tendon d'Achille (Q1) du tibia, on incise les tissus musculaires de manière à dégager au moins partiellement l'ischium (e1), l'ilium (e2) et le sacrum (f), et on incise l'épine dorsale (k) ; - on dégage le filet et le merlan et on place le quartier (Q) dans une position semi-horizontale dans laquelle on scie les côtes (g) ; - on transfère le quartier à un second crochet (6′) traversant le tendon d'Achille (Q1) ; - on lève au moins partiellement la tranche et on dégage le tibia, la rotule et le fémur ; - on procède à une séparation progressive de l'ensemble du support osseux par découpage, celui-ci étant assisté par une traction mécanique exercée sur le tibia.
