Es wird ein Verfahren und eine Aufbereitungsstraße zur Herstellung gegärter und gefrosteter Teiglinge beansprucht, in der sogenannte grüne" Teiglinge in einem Gärraum (1) gegärt und anschließend in einem Entfeuchtungsraum (2) entfeuchtet werden, wobei den Teiglingen insbesondere die während des Gärprozesses im Bereich zwischen Krume und Kruste aufgenommene Feuchtigkeit entzogen wird, um ein späteres Abplatzen der Kruste von der Krume beim fertig gebackenen Teigling weitestgehend zu vermeiden. Danach werden die Teiglinge in einem Schockfrostraum (3) schockgefrostet und anschließend in einem Tiefkühlraum gelagert, von dem sie z. B. an Bäckereien ausgeliefert werden, welche die Teiglinge in eigenen Öfen fertig backen.
