Die vorliegende Erfindung betrifft ein Verfahren zur Durchführung eines Reifeprozesses von Wurstwaren. Es werden ein Reifeschrank (1) und ein Dampferzeuger (8) verwendet. Die Wurstwaren befinden sich zur Durchführung des Reifeprozesses in dem Reifeschrank (1). Der Reifeschrank (1) ist mit dem Dampferzeuger (8) derart gekoppelt (9, 7), dass eine Dampfzufuhr in den Reifeschrank (1) erfolgen kann, indem von dem Dampferzeuger (8) erzeugter Wasserdampf in den Reifeschrank (1) einströmen kann. Der Reifeschrank (1) weist einen Temperatursensor (2) auf zur Messung der Temperatur im Inneren des Reifeschrankes. Die Durchführung des Reifeprozesses wird geregelt. Nach der vorliegenden Erfindung ist der Dampferzeuger (8) außerhalb des Reifeschrankes (1) angeordnet. Die Stellgröße der Regelung ist die Zufuhr von Wasserdampf aus dem Dampferzeuger (8) in den Reifeschrank (1). Die Führungsgröße der Regelung ist ein Sollwert der Temperatur des Temperatursensors (2), wobei bei einem oberen Wert als Messwert des Temperatursensors (2) die Dampfzufuhr in den Reifeschrank (1) unterbrochen wird und wobei bei einem unteren Wert als Messwert des Temperatursensors (2) die Dampfzufuhr in den Reifeschrank (1) vollständig geöffnet wird. Die Erfindung betrifft außerdem eine Vorrichtung zur Durchführung des Verfahrens.

A method for processing vegetables comprises (i) a dicing step comprising subjecting the vegetable to mechanical size reduction; (ii) a softening step comprising heating or freezing the vegetable for a pre-determined period; and (iii) a treatment step comprising bringing the softened vegetable product into contact with one or more reactive oxygen species. The reactive oxygen species may be a peroxide, superoxide or ozone. Preferably the method is used for processing cauliflower into a low-carbohydrate substitute for rice. The treatment prevents discolouration and minimises the production of malodorous volatile chemicals.

The invention relates to a method for preparing food to be preserved with sugar, comprising steps consisting in: placing the food to be preserved in a cooking vessel with a pre-determined quantity of sugar syrup or honey syrup; carrying out a primary cooking process by heating the food to be preserved and exposing same to a pressurised steam atmosphere for a primary cooking time; decompressing the cooking vessel and leaving the food to be preserved to macerate in the syrup for a maceration time; and carrying out a secondary cooking process by heating the food to be preserved and exposing same to a pressurised steam atmosphere for a secondary cooking time.

Methods of preserving fresh fruit with fresh fruit preservatives which extend the shelf life of fresh fruit particularly fresh cut fruit, are provided. The fresh fruit preservative preserves the texture, flavor, appearance, crispness, and color of the fresh fruit, particularly the exposed skin of the fresh fruit. The method comprises the following steps: providing a solution of fruit preservative comprising: water, calcium ions; and ascorbate ions, wherein the calcium ion and ascorbate ions are present in a ion ratio of preferably from about 1.5:1 to about 2.5:1; and, applying said fruit preservative to the fruit. Preferably the fruit is then stored at a temperature which will not freeze the fruit; temperatures of -6 °C have been found not to freeze the apples. Preferably the fruit is stored at temperatures of between about -7 °C to room temperature, about 20 °C, more preferably about -2 °C to about 7 °C, most preferably from about 2 °C to about 5 °C. The invention also relates to fresh fruits preserved with the fresh fruit preservatives.

[Solution] An electrolyzer 11 electrolyzes a chloride-containing aqueous electrolyte solution to generate acidic electrolyzed water, the aqueous electrolyte being pre-adjusted to pH 3 to 5 with a pH adjuster. An acidic water container 13 is connected to the electrolyzer 11, and stores the acidic electrolyzed water generated by the electrolyzer 11. A gaseous chlorine circulator 14 collects gaseous chlorine generated from the acidic electrolyzed water in the acidic water container 13, and the gaseous chlorine collected is supplied to the acidic electrolyzed water in the acidic water container 13 by bubbling. A transition metal supply unit 16 is provided so that a transition metal-containing solution can be supplied to the inside of the acidic water container 13.
