摘要: PROBLEM TO BE SOLVED: To provide germinated brown rice where nutritive value is not spoiled, capable of easily and tastily cooking rice with a household rice cooker, and excellent in palate feeling and preservability. SOLUTION: This germinated brown rice is characterized by being obtained by the following steps: eliminating free water from the surface of germinated brown rice so as to become almost singly granular state followed by heating and moisturizing the almost singly granular state germinated brown rice, and drying the thus treated resultant rice so that the soaking absorption rate of the germinated brown rice is 110-140%, water content is 10-18%, alpha rate is 5-50%. Processed food can be obtained by using this germinated brown rice as a raw material.

摘要: PROBLEM TO BE SOLVED: To provide a method for producing germinated unpolished rice by which neither cracking nor crushing is caused, needing no process for conveying unpolished rice, and also excellent in sanitation. SOLUTION: This method for producing germinated unpolished rice, is characterized by carrying out a series of processes comprising impregnation of unpolished rice, germination, heating and drying in a single and common container, wherein germinated unpolished rice is prevented from being cracked and crushed because the processes are also simplified. Moreover, according to this method, sanitary problem and preservability of the thus obtained germinated unpolished rice are extremely improved.
