Abstract:
An apparatus is provided for curing and more specifically for cold smoking meat or seafood with a blend of filtered smoke from an organic smoking material such as softwoods such as pine or tropical palms such as coconut wood or such as mixed wood sawdust from a sawmill, that are not traditionally used for smoking seafood or meat due to the harsh flavor imparted by their smoke, and unfiltered smoke from a second organic smoking material such as hardwood smoke, or other pleasant flavor-imparting smoke. The blending of filtered smoke from a first organic smoking material such as coniferous softwood, tropical palm wood or mixed sawdust from a sawmill with unfiltered pleasant flavor-imparting smoke from the second organic smoking material reduces the cost of the smoking and curing process and allows versatility in application in terms of preservative properties and flavor imparted to the cured meat or seafood.

The invention refers to a foaming device (100) for foaming and/or heating a fluid inside a container (20), the device further comprising a processing element (10), a driving unit (30) and a distinct heating unit (40) such that the processing element (10) is mechanically decoupled from both the heating unit (40) and the driving unit (30), the processing element (10) being movable inside the container (20) in response to a magnetic field generated by the driving unit (30), the processing element (10) further being inductively heatable by an oscillating magnetic field provided by the heating unit (40).

A process for producing milk foam includes pumping milk through a milk line with a milk pump having an adjustable speed for adjusting the capacity of the milk pump. Milk from the milk line and air are mixed inside a first mixing chamber to produce a milk foam. Properties of the milk foam, including a consistency of the milk foam, are a function of the speed of the milk pump. A device for producing the milk foam includes a milk container; an outlet; a milk line connected between the milk container and the outlet; a first mixing chamber installed in the milk line to mix milk and air to produce milk foam; and a milk pump having an adjustable speed coupled into the milk line.

A method and system for storage of respiratory produce includes a storage environment, a gas analyze, a CO2 scrubber, a gas sampling pump, a gas pump for the scrubber, an air supply, an N2 supply and valves for flow control. The control system is a software assisted measurement system and control algorithm that takes into account the gas exchange dynamics of both the produce and the storage environment and a mathematical model for determining the actual respiratory and fermentative rates of the produce. The system is suitable for low oxygen storage of respiratory produce.

In a method for deaerating a liquid the liquid is pressurized to a pressure above atmospheric, after which it is guided to an upstream end of a nucleation valve. A low pressure resides on the downstream end of the nucleation valve and as the liquid passes the valve, bubble nucleation is initiated, forming the first step in a deaeration process. According to the method the temperature and pressure on the downstream side of the valve is controlled such that the static pressure is above the saturation pressure, while the lowest pressure as the liquid passes the valve is below or equal to the saturation pressure
