The present invention relates to a melon cutting apparatus that cuts a melon portion or melon half. The apparatus cuts the melon pulp into sections, and removes the rind from the pulp. The apparatus includes a base having an opening; a cutting matrix that has a plurality of blades, wherein the cutting matrix communicates with the opening. The apparatus also includes a sweeping blade that is curved and positioned at or near the cutting matrix and is used to cut the rind from the melon pulp. The apparatus further includes an actuator that engages the sweeping blade. The apparatus embodies an arm attached to the apparatus, and a pressure cap that is mounted to the arm, opposite the cutting matrix. Additionally, the present invention pertains to systems and methods of using the apparatus.

To prevent damaging the rotary reciprocating knives and/or the cups which hold the fruit in a pimento coring machine caused by non-synchronous operation of the fruit conveyor and the reciprocating knife carriage, a sensing probe on the carriage near its lower end engages a roller of the chain to prevent complete descent of the knife carriage, thus protecting the knives and cups when the non-synchronous condition exists. When the chain is properly synchronized with the knife carriage, the probe can enter a space between two rollers and two side links of the dwelling chain so as to allow full descent of the knife carriage and knives.

A machine for processing pineapples, wherein the remaining blemishes and skin are trimmed from the top and butt portions of a sized and partially skinned cylinder of fruit automatically during processing through sizing, coring, and top and butt removal operations. The automatic top and butt trimming permits an increased yield of higher grade product through more precisely controlled cutting and trimming than have previously been accomplished by hand operations. Labor costs are also substantially reduced.

Apples are picked from a bulk supply and are fed continuously in single file order one at a time to a primary orientor, the first of two orientors. The primary orientor positions each apple with its two indents generally aligned on a vertical axis and its outer surface centered. However, the upper indent may or may not be in vertical alignment with the lower indent. The semioriented apples are then engaged by a second orienting mechanism which engages both indents of the apple to refine vertical alignment of the indents. Thereafter, each properly oriented apple is acted upon by peeling and coring mechanism which removes the skin and core and trims the apple indents. Apples which are not fully oriented by the second stage orientor are rejected immediately so that only oriented apples are peeled and cored.

A system for automatically forming chunks and spears at high speed from unpeeled fruit items is provided. The fruit is sliced into unpeeled wedges. The unpeeled wedges are conveyed into a plurality of staggered transverse chunking blades, wherein the flesh, but not the peel, is cut sequentially from the center of each wedge outwardly, flattening each wedge. A peel removal knife is located to sever the peel of each wedge from the center outwardly after the transverse chunk cutting blades have cut the flesh. Spears may be formed by deleting some of the transverse chunking blades.
