    摘要: Processes for the enzyme-catalyzed synthesis of triglycerides containing polyunsaturated fatty acids in which the synthesis is preceded by a pre-hydrolysis in which (a) C1-4 alkyl esters of polyunsaturated fatty acids are completely or partly hydrolyzed in vacuo with continuous addition of water or are partly hydrolyzed in several stages without vacuum, (b) after the hydrolysis, the water is removed by separation or distillation and (c) the synthesis of the polyunsaturated fatty acids with glycerol in vacuo in the presence of an enzyme to form their triglycerides is carried out under low-water conditions, (d) the enzymes are removed from the triglyceride by separation or filtration and (e) the remaining fatty acids and/or possible residues of C1-4 alkyl esters are removed from the triglyceride by distillation or refining; the pre-hydrolysis and the subsequent synthesis preferably being carried out as a one-pot process in the same reactor and in the presence of the same enzyme.

    摘要: The invention relates to a process for the enzymatic synthesis of esters of polyunsaturated, short-chain or sensitive fatty acids with a high triglyceride content, which is made up of an enzymatic synthesis of the mixture of triglycerides and partial glycerides starting from free fatty acid, methyl or ethyl esters and glycerol, a subsequent selective enzymatic back-hydrolysis of the partial glycerides to fatty acid and glycerol and distillation-based separation of the triglycerides, and to the triglyceride-rich ester mixtures obtainable by this process. The process is preferably carried out as a one-pot process in the same reactor and in the presence of the same enzyme.

    摘要: The disclosed invention relates to emulsions containing, based on the total weight of the emulsion, a) 0.1 to 50% by weight of a conjugated linoleic acid or derivative thereof, b) 0.1 to 30% by weight of a vegetable lecithin mixture, c) 0 to 20% by weight of a co-emulsifier, d) 0 to 70% by weight of a polyol, e) 0 to 70% by weight of a carbohydrate, f) 0 to 1% by weight of an antioxidant, and g) 20 to 99% by weight of an aqueous phase, with the proviso that the emulsion contains no other oils and fats except for the triglycerides of components a), b) and/or c) optionally present. The emulsions may be directly processed in foods, more particularly beverages, and show high stability in storage.
