    摘要: The invention relates to baked potatoes and, particularly, to convenient forms of baked potatoes having an optimally-baked flavor and texture which can be simply prepared for serving in any size portion with a minimum of effort. In one preferred form, the product will be in the form of baked potato pieces with the skin attached, preferably having a moisture content of from about 70 to about 75% and flavor and texture profiles characteristic of optimally baked potatoes. A process and an apparatus for preparing the potatoes and a packaged form are also provided. The process calls for freezing a baked potato and subdividing the potato into discrete pieces of a size of from about 0.5 to about 1.5 inches, preferably by means comprising at least one roller pair comprising a plurality of rotatably mounted blades with cutting edges angularly offset (FIG. 7) or diagonally-opposed, spaced cutting blades (FIG. 7).

The portable transition module is in communication with each of said one or more portable cooling modules in such a manner to maintain the cold temperature of said cooled product. The use of the flexible material allows for simple cleaning of the cooling device even if large rotatable cylinder are involved that comprise an Archimedian screw in their inner space, thus allowing for homogeneous, clean and efficient cooling of the articles. As cooling medium cryogenic liquid, in particular liquid nitrogen or liquid carbon dioxide, or cryogenic solid such as carbon dioxide snow may be used.

    摘要: A method of producing shattered, preservative-free dried fruit or vegetable pieces. Preferably, low moisture fruit is cryogenically frozen and the frozen fruit is then impacted (preferably using a roller mill or tumbler) to produce randomized, shattered fruit pieces (preferably having size primarily in the range from ¼ inch to ⅜ inch). The shattered fruit pieces are optionally dried (for example, while they are warmed in a warm air dryer) to reduce their moisture content to 22%-25% prior to packaging. In an optional, preliminary processing step, dried fruit is first rehydrated to a moisture content of 22%-30% (preferably 23%-25%) to produce low moisture fruit. The low moisture fruit is pitted and then frozen. The frozen, low moisture fruit is then shattered (and optionally then dried) in accordance with the invention. Other aspects of the invention are apparatus for producing shattered, preservative-free dried fruit or vegetable pieces, which include a dual pass roller mill or a tumbler for shattering the frozen plant material.
