摘要: The present invention addresses the problem of providing a novel freezing system and a method for producing frozen ingredients, the system and method being such that the amount of free water after defrosting of the frozen ingredients is lower than with conventional freezing. The present invention solves the above problem by providing an ingredient freezing system comprising two or more freezing units for freezing the ingredient, and a transport unit for transporting the ingredient to the two or more freezing units, the two or more freezing units being configured so as to freeze the ingredient in stages so that the ingredient is frozen at progressively lower temperatures as the ingredient is transported on the transport unit.

摘要: The purpose of the present invention is to provide a food processing system that allows processed food that is sterilized and has a good texture to be identically provided on a large production scale. The food processing system is provided with: a heating unit equipped with a heating mechanism for indirectly heating food; a cooling unit equipped with a cooling mechanism for cooling the food heated by the heating unit; and a transfer unit for transferring the food through the heating unit and the cooling unit. The integrated food processing system according to the present invention allows a large amount of sterilized food having a good texture, good taste and long shelf life to be provided.

摘要: Potatoes are processed to develop baked and fried flavors and aromas. The are baked to create a number of characteristic baked flavors and textures. When fried, a whole other group of flavors and textures is achieved. To avoid damage to the discrete potato pieces that are prepared in processing and are desired in the final product, the process entails baking potatoes; pressing the potatoes to a predetermined thickness; freezing the potatoes; breaking the potatoes into discrete pieces; drying the discrete pieces to form a skin thereon and preferably lightly brown the surfaces; and freezing and packaging the pieces. Oven heating will be sufficient to provide a browning effect to a light golden to golden brown color and form a skin on the exterior surface of exposed potato pulp, both important to the preparation of the best product.

摘要: The invention relates to baked potatoes and, particularly, to convenient forms of baked potatoes having an optimally-baked flavor and texture which can be simply prepared for serving in any size portion with a minimum of effort. In one preferred form, the product will be in the form of baked potato pieces with the skin attached, preferably having a moisture content of from about 70 to about 75% and flavor and texture profiles characteristic of optimally baked potatoes. A process and an apparatus for preparing the potatoes and a packaged form are also provided. The process calls for freezing a baked potato and subdividing the potato into discrete pieces of a size of from about 0.5 to about 1.5 inches, preferably by means comprising at least one roller pair comprising a plurality of rotatably mounted blades with cutting edges angularly offset (FIG. 7) or diagonally-opposed, spaced cutting blades (FIG. 7).

摘要: Nitrogen fruit freezing apparatus includes a conveyor on which fruit passes beneath a spray of liquid nitrogen, and the liquid nitrogen falls downwardly, gasifies, and flows to a chiller unit where the gas is used to cool water. The water cooled by the nitrogen gas is sprayed onto the fruit before the fruit is conveyed to the liquid nitrogen freezing area and is sprayed onto the fruit to glaze the fruit after the fruit is frozen. The cooled water may also be used for cooling a room or a building, etc. The nitrogen gas is exhausted to the atmosphere from the water chiller unit.

摘要: A method for cooling heated food products such as cut whole kernel corn and peas, is described in which the product is fed onto a perforated support plate and contacted with a water spray and air of a lower temperature. The air is blown up through the perforated support plate to suspend the food product in a fluidized bed and to pass through the bed to evaporate a portion of the water to further cool the food product. The support plate is directionally vibrated to convey the fluidized bed from an infeed end to a discharge end. A water spray system directs a water mist onto the fluidized bed to maintain the food product moist and to enable the air to evaporate a portion of the water.
