摘要: A cook and hold system having an oven, a food warmer and a metallic food tray. The metallic food tray is used in the oven to hold the food products during cooking and then is rapidly transferred to the food warmer for holding. The food warmer has doors that cover the food warmer inlets so as to retain moisture and heat so that the food products are moist and warm when removed from the food warmer. The food tray has a bottom with parallel ribs that provide grill markings on the food products and a trapping of cook byproducts, such as moisture, grease and particles in the bottom spaces along side the ribs. These byproducts help to preserve heat and moisture when the food tray is transferred from the quick cook oven to the food warmer.

摘要: The present invention is directed to improving the conventional high-speed cooking oven based on a combination of hot air impingement and microwave heating by providing a time-dependent spatial variation in the net air impingement and/or net microwave energy applied to the food product in the oven. This is aimed at optimizing heat transfer and microwave efficiencies in a high-speed cooking oven, thereby enabling the oven to deliver an optimal cooking efficiency in comparison to the conventional high-speed cooking oven. In addition, under the embodiments of the present invention, the cooking efficiency may be further optimized by providing a plenum between each wall of the cooking chamber and the housing of the oven. With the optimized cooking efficiency provided by the present invention, the high speed cooking technology may now be extended to ovens operating on a power supply based on a voltage less than 220 volts and a current less than 30 amperes, preferably approximately 13.5 amperes; or at a voltage between 110 and 125 volts, and a current less than 30 amperes, with more productive results, so that the high-speed cooking technology may find a wider applicability and customer base.

摘要: An antenna cover assembly for a high-temperature operating environment has a cover plate, gasket portions, and a retainer plate. The cover plate has an inner side and an outer side, the cover plate being translucent to at least one selected frequency of electromagnetic energy. The gasket portions are each located adjacent one of the inner and outer sides, each gasket portion being configured for sealingly engaging the adjacent side. The retainer plate is configured for attachment to a structure located in a high-temperature operating environment. The retainer plate has a sealing flange adapted for clamping the cover plate generally adjacent an antenna portion of a waveguide.

A speed cooking oven with radiant mode is disclosed comprising a cooking cavity, a controller, thermal heating source, blower assembly, air directing means, a vent assembly and a gas by-pass system. Hot gas is circulated by the blower motor assembly into the oven cavity where the hot air is directed in a manner wherein a conflicting, colliding turbulent gas flow is directed at a food product providing for the rapid cooking of food products. Alternatively, gas may be diverted around the cooking cavity and maintained at the same temperature, lower temperature or elevated temperature as compared to the cooking cavity without having a direct effect on the food product being cooked.

Cooking instruction(s) may be preset or set manually by a user. A first cooking operation is performed according to the set cooking instruction(s). A cook time required to perform a second cooking operation is set based on a time required to perform the first cooking operation. The second cooking operation is performed for the cook time while controlling the output power of the magnetron to perform a rapid cooking operation.

摘要: A cooking appliance incorporates a convection system including a blower or fan having an associated heating element used for thawing food items in an oven cavity. The convection fan and its associated heating element are specifically controlled to regulate the air flow and temperature within the oven cavity in a manner which significantly reduces thaw time over ambient conditions, while not negatively effecting food quality. In accordance with the most preferred form of the invention, the convection fan is constantly operated at a high RPM and the convection heating element is operated in the order of 80° F.-100° F. (approximately 26-38° C.) in order to establish and maintain an oven cavity temperature of about 80° F. (approximately 26° C.) for food thawing purposes.
