A crystalline lactitol monohydrate having lattice cell constants a =7.815.+-.0.008 .ANG., b=12.682.+-.0.008 .ANG., and c=15.927.+-.0.008 .ANG., and a melting range between 90.degree. and 105.degree. C., and a water content between 4.85 and 5.15%, as well as a process of preparing said crystalline lactitol monohydrate by evaporating the aqueous solution of lactitol to a concentration between 75 and 88% by weight, cooling the resultant mixture at a temperature ranging between 30 and 75.degree. C., subsequently separating the lactitol monohydrate crystals from the mother liquor, and subsequently drying with air having a temperature between 120.degree. C., and a relative humidity between 0 and 40%, for a time period less than 24 hours. The invention also relates to the use of said crystalline lactitol monohydrate as a bulk sweetener for the total or partial replacement of sucrose, in dietetic products, confectionery, bakery products, cereals, desserts, jams, beverages, chocolate, chewing gum and ice-cream, and in pharmaceuticals and cosmetic products, such as tooth paste, as well as a special sweetening agent resembling sucrose, mainly composed of said crystalline lactitol monohydrate.

The invention relates to a novel crystalline anhydrous lactitol, a process for the preparation thereof, and the use thereof. The novel crystalline anhydrous lactitol belongs to the monoclinic crystal system and has the unit cell constants: (a)=7.614 A; (b)=10.757 A; (c)=9.370 A and .beta.=108.2.degree.. Its melting point is between 149.degree. C. and 152.degree. C., water content below 0.5% and lactitol content more than 99%; it has a low hygroscopicity.

A method of recovering lactose from milk whey or cheese whey with a high yield, wherein the whey is concentrated, part of the lactose is crystallized, and the crystals are separated and dried; the mother liquor is purified by heating it to about 60.degree. to 70.degree. C. at a pH of about 5.8 to 7.0 and by removing the resultant precipitate by centrifugation; the purified mother liquor is fractionated chromatographically, using sulphonated polystyrene resin which is in sodium ion form and cross-linked by a 3-6% per weight divinylbenzene and which is even-grained, the flow rate is about 0.4 to 1.5 m.sup.3 /h, the temperature about 50.degree. to 75.degree. C., and the pH about 5.5 to 7; whereafter elution is carried out with water, and the following fractions are recovered: a protein fraction which may also contain salts, an intermediate fraction which is recirculated to the fractionating step, and a lactose fraction which is passed to the crystallization step.

Betaine is recovered from natural sources such as beet molasses, rest molasses and vinasse by diluting the molasses to 25-50% solids, introducing the molasses to the top of a chromatographic column containing a salt of a polystyrene sulfonate cation exchange resin cross-coupled with from about 2 to about 12 weight percent of divinylbenzene, eluting with water and collecting a fraction of betaine from the downstream side of the resin. When successive feeds with predetermined intervals are made, the feeds may be partly overlapped. The betaine from the preceding feed is then eluted by the dilute molasses from the following feed. The betaine fraction is evaporated under vacuum and the betaine crystallized as anhydrous crystals or as betaine monohydrate.

A method for preparing pharmaceutical grade xylitol from an aqueous solution containing mixtures of polyols including xylitol which comprises subjecting the solution to a crude crystallization and recrystallization of xylitol followed by the recovery of residual xylitol from the mother liquor by fractionating the solution using at least two columns of ion-exchange resin in two different metal forms.
