    摘要: A clamshell type grill having an upper cooking platen mounted on a platen support arm for swinging movement between a lower cook position overlying a lower cooking platen and a raised position inclined upwardly from the lower cooking platen. The upper platen is manually operable to its lower cook position in which an arm stop in the arm engages an arm stop abutment and a pneumatic clamp cylinder is arranged to press and hold the platen support arm in its lower cook position. The upper platen is mounted on the platen support arm for limited floating movement in a direction perpendicular to the upper platen and adjustable platen stops on the platen support arm are arranged to engage platen stop abutments on the upper platen to limit downward movement of the upper platen to a preset lower position relative to the platen support arm and thereby control spacing of the upper platen from the lower platen.

    摘要: An apparatus for effecting two-sided cooking of food products, such as frozen hamburger patties, is disclosed which has been configured for highly desirable efficiency, versatility, and consistency in food product preparation. The apparatus includes a housing upon which is mounted a substantially horizontal lower platen assembly, with the apparatus further including one or more upper platen assemblies each mounted on a respective pivotal support arm for movement between a lowered inactive position and a raised active position with respect to the lower platen assembly. The apparatus includes a mounting arrangement for permitting limited relative movement of each upper platen assembly with respect to its support arm, and further includes mechanisms for maintaining a predetermined minimum spacing between the upper and lower platens for avoiding undue compaction of the food products. Automatic controls effect upward movement of the upper platen for precise cooking control.

    摘要: An device and method are provided for steam injection heating to melt a cheese component of a food item of a food product. The device includes a housing for a steam generator and a steaming chamber. Generated steam is injected into the steaming chamber to melt the cheese component of the food item held in a container inserted into the steaming chamber. The device is configured to rest on a counter so that the counter provides an interior support surface in the steaming chamber. The counter also provides an exterior support surface for the container and a work surface. The container is inserted into the steaming chamber by sliding it on the exterior surface and is received and supported by the interior support surface. A food product having a melted cheese component is assembled, produced and packaged while the container is supported in the single plane of the counter.

    摘要: A method is provided for storing a cooked food in a flexible-walled container having an opening. The method includes placing a quantity of food in a flexible-walled container and submerging at least a portion of the container in a liquid with the opening being located so that liquid does not enter the opening. At least the lower portion of the container is maintained in the liquid and the food is maintained in the container below the surface of the liquid. The liquid collapses the container to seal the container. The temperature of the liquid may be maintained at a non-ambient temperature to heat or cool the food as it is stored. The method may also include storing the food adjacent a work surface, or at a remote main vat and transporting the rack to the work surface at which a serving that includes the food is prepared.
