摘要: The inventive food holding apparatus comprises a holding area that accommodates food and warms the food with heat radiated by a bottom surface and with warm convection air. Part of the convection air forms an air curtain having a Bernoulli effect that removes excess moisture from the external surface of the food and maintains the food in a warm, crisp condition. The apparatus conditions food to attain a biologically safe noncooking temperature and to retain its freshly cooked texture and internal moisture for more than two hours. This lets restaurants serve the food longer to its customers, allowing efficient batch cooking and significantly decreasing food waste.

摘要: An electrothermal film layer manufacturing method, an electrothermal film layer, an electrically-heating plate, and a cooking utensil. An electrothermal film layer is formed, by means of a spraying method, a deposition method or an evaporation plating method, on a surface of an insulation substrate with a temperature of 450 to 600 degrees by using a mixture comprising tin dioxide, antimony and fluorine; and then the electrothermal film layer is manufactured by performing annealing and filming processing on the electrothermal film layer and the insulation substrate. The electrothermal film layer manufacturing method is simple and is convenient to operate, the manufactured electrothermal film layer can convert radiant heat energy into infrared heat energy to radiate, allows heat to be rapidly increased, can reduce temperature loss caused by moisture exhaust, increase the speed of heat energy absorption, and decrease heat energy loss, and accordingly the radiation heat conduction efficiency is effectively improved, the objective of energy conservation is achieved, and the demands of a nation on energy conservation products are better satisfied.

摘要: A grill accessory creates a steaming chamber on a grill that has a heat source and a rack of spaced-apart bars over the heat source. The grill accessory includes a cover configured that covers a food item and forms a steaming region below the cover. The cover operates in connection with a vapor generator that receives and holds fluid beneath the cover. The vapor generator has at least one vent opening to release steam into the steaming chamber. The grill accessory is configured so that it can rest upon the grill rack of spaced-apart bars, and so that the vapor generator transmits heat to the fluid in the vapor generator to convert the fluid to steam. The vapor generator releases the steam through the vent opening(s) into the steaming region below the cover. The steam can help melt toppings and/or introduce moisture into food items cooked on the grill.

摘要: A thermal exchange food processing device includes a thermal conductive body, a thermal insulation layer and a phase change material. The thermal conductive body has an acting region and an inner thermal conductive region corresponding to, and in thermal connection with, the acting region. The thermal insulation layer has a lower thermal conductivity coefficient than the thermal conductive body and encapsulates, at least in part, the thermal conductive body, so that the acting region of the thermal conductive body is exposed while the remaining regions of the thermal conductive body other than the acting region are thermally insulated from ambient temperature. The thermal conductive body, alone or together with the thermal insulation layer, defines an accommodation space, and the inner thermal conductive region is situated to face the accommodation space. The phase change material is within the accommodation space.
