    摘要: The inventive food holding apparatus comprises a holding area that accommodates food and warms the food with heat radiated by a bottom surface and with warm convection air. Part of the convection air forms an air curtain having a Bernoulli effect that removes excess moisture from the external surface of the food and maintains the food in a warm, crisp condition. The apparatus conditions food to attain a biologically safe noncooking temperature and to retain its freshly cooked texture and internal moisture for more than two hours. This lets restaurants serve the food longer to its customers, allowing efficient batch cooking and significantly decreasing food waste.

    摘要: A grill accessory creates a steaming chamber on a grill that has a heat source and a rack of spaced-apart bars over the heat source. The grill accessory includes a cover configured that covers a food item and forms a steaming region below the cover. The cover operates in connection with a vapor generator that receives and holds fluid beneath the cover. The vapor generator has at least one vent opening to release steam into the steaming chamber. The grill accessory is configured so that it can rest upon the grill rack of spaced-apart bars, and so that the vapor generator transmits heat to the fluid in the vapor generator to convert the fluid to steam. The vapor generator releases the steam through the vent opening(s) into the steaming region below the cover. The steam can help melt toppings and/or introduce moisture into food items cooked on the grill.

    摘要: A temperature controlled food serving having at least one channel of thermally conductive material for receiving at least one food-holding pan. The at least one channel defines an elongate pan receiving cavity for placement of the at least one food-holding pan at any desired location along the cavity. A temperature control system comprises at least one heating element for heating the at least one channel to maintain food products held in the food-holding pans at a food holding temperature. The at least one channel has at least two different temperature zones along a length of the channel so that food products in different temperature zones can be held at different food holding temperatures.

    摘要: A thermal exchange food processing device is comprised of a thermal conductive body, thermal insulation layer and phase change material. The thermal conductive body consists of an acting region and an inner thermal conductive region disposed in accordance to and in thermal connection to the acting region. The thermal insulation layer has a lower thermal conductivity coefficient compared with the thermal conductive body and encapsulates at least in part the thermal conductive body, so that the acting region of the thermal conductive body is exposed while remaining regions of the thermal conductive body other than the acting region are thermally insulated from ambient temperature; wherein the thermal conductive body alone or together with the thermal insulation layer defines an accommodation space and the inner thermal conductive region is disposed to face the accommodation space; and the phase change material disposed within the accommodation space.
