Abstract: Active ingredient capsules are proposed which are obtainable by, with the input of mechanical and thermal energy, (a) dissolving and/or dispersing proteins, polysaccharides and cellulose derivatives in water, (b) adding the active ingredients to be encapsulated, (c) hardening the resulting coacervates with the addition of tannins and optionally (d) then subjecting them to a spray drying.
