摘要: A process for producing flavor-containing sugar-free capsule, the flavor being encapsulated in a carbohydrate mixture containing polysaccharide(s) and hydrogenated saccharide(s) at a weight ratio of from about 15:85 to about 85:15 on a solid basis. Flavor-containing sugar-free capsules which have a low cariogenicity and a structural strength of a certain level and can be stored for a prolonged period of time can be obtained.
