The apparatus includes a casing, an impeller adapted for rotation within the casing about an axis thereof, and knives that perform, in sequence, slicing, strip-cutting and crosscutting on a product to produce reduced-size products. The apparatus is capable of performing a method by which a product is introduced into the impeller and the impeller is rotated to slice the product with a slicing knife and produce therefrom slices having peaks and valleys on opposite surfaces thereof and a cross-sectional shape that periodically varies in thickness. Strips are then produced from each of the slices by forming parallel cuts, each coinciding with a peak of each slice so that each strip has a width substantially identical to a wavelength of the slice.

The device comprises a pusher panel disposed in sliding cooperation with a feed channel, the feed channel defined by a structure preferably having a smooth, flat bottom surface to promote ease of sliding across a smooth flat table of a meat saw machine. Preferably, the device includes a feed handle mounted for advancing the pusher panel, and a cutting and return stroke handle mounted to one or both sides of the channel structure for moving the entire device laterally in cutting and return stroke directions. A guide panel extending below a base of the channel structure cooperates with an edge of the meat saw table to guide a lateral cutting stroke movement of the device.

Methods and apparatuses for reducing food products. Such a method includes introducing a food product into an impeller rotating within a casing about an axis thereof. The impeller has paddles and pockets defined by and between adjacent pairs of the paddles. The paddles are circumferentially spaced so that each pocket is sequentially radially aligned with a circumferential opening of the casing as the impeller rotates. Each paddle has a relief slot defined in an outer radial edge of the paddle. Food products are expelled from the pockets and cut with a knife disposed at the circumferential opening of the casing as the impeller rotates and the pockets travel past the circumferential opening. The knife defines a cord of the casing, extends into the path of the paddles, and passes through the relief slots of the paddles.

The chubs are then transported to the harping station where each of the chubs undergoes a single cutting operation, thus simultaneously forming the meat slices therefrom and substantially maintaining the slices in the configuration of the chubs for generating well-formed stacks of the slices. Thereafter, the stacks are received at the insertion station where they are transferred to their packages, on an automated basis without the need for manual handling thereof. This is enabled due to the well-formed stacks generated by the harping station which allows the stacks to be dropped into the packages aligned therebelow.

Apparatus for cutting cheese blocks (1) into portions (13) conveys the cheese along a linear processing path. Longitudinal cutters (6,7) for dividing the depth and width of the cheese block, with separation of layers when the depth is divided, create sets (120) of longitudinal sticks (12) conveyed side-by-side. These are presented to a guillotine cutter (8) which, on the basis of measured length and weight of the set (120), makes successive transverse cuts dividing the stick set (120) into successive sets (130) of portions (13) which are then separated from one another for packaging. A control processor (CP) uses measured block weight and dimensional information to determine an optimal disposition of cuts taking account of product standard criteria (e.g. maximum permissible deviation from and maintenance of an average portion weight) together with minimized wastage. A refinement takes into account weight and/or dimensional data from other blocks in order to further reduce wastage by allowing one block's deviation from the norm to compensate for another block's deviation.
