A rubber or other compressible-material grommet is disposed at an end of the appliance adjacent to the pourer. The grommet has a plurality of concentric rings. A cap may be included which functions as a shot measurer and/or shot glass. The cap is held in place by concentric rings about the grommet closest to the pourer, the rings being slightly larger in diameter than an inner diameter of a receptacle of the cap. Other concentric rings disposed opposite the pourer end may have different diameters and are configured for fitting bottles having a variety of neck inner diameters. An air channel acts as a vacuum breaker.

An alcoholic beverage is aged in at least one wooden barrel after the barrel is covered by a film having an oxygen transmission rate of at least 0.5 cc/m2/day and an ethanol transmission rate of less than 30 g/m2/day. The beverage acquires one or more specific flavor components in an amount of 50%, 75%, 90%, or 100% relative to amounts of one or more of the same flavor components in a control alcoholic beverage aged in at least one wooden barrel without the film thereon. Covering the barrel with the film reduces the angels' share evaporative loss, while allowing the beverage to develop desirable flavor components during aging. In another embodiment, the process reduces angels' share evaporative loss while achieving organoleptics indistinguishable from a control.

The method (10) comprises the steps of conditioning the exterior surface (24) of a dismantled stave (20); and profiling the conditioned stave (30) to increase its aging surface area. The profiled stave (20) can then be heat treated (e.g., toasted and/or charred) to create the wood insert (50). The insert (50) can be used to integrate a wood flavoring during the aging of an alcoholic beverage, such as a non-bourbon whiskey.

A liquid may be aged and infused using a wooden infusion apparatus having grain oriented along a longitudinal axis of a rod. One preferred infusion apparatus comprises machining a grain oriented wooden cylinder into the shape of a spiral having a longitudinal central axis. A preferred method is disclosed for continuously machining wooden rods into spirals, and subsequently toasting them. Another infusion apparatus comprises a plurality of wooden discs connected by a longitudinal central axis in the form of a rod, the wooden discs which are toasted. The present invention allows for more control over the time required to properly age the wine and to impart the wood flavor by giving the producer more control over the amount of wood surface area that is exposed to the wine. The rate of infusion is increased substantially when the wood grain extends along the longitudinal axis of the infusion apparatus. The shape and size of the infusion apparatus may be customized to fit any container from a huge wine barrel to a small liquor bottle. Additionally, the infusion spiral may be connected to a lid or bung of a container, and may thereby be removed when desired by merely opening the lid or bung. The infusion spiral can be replaced, by this same manner, with a different type of wood infusion spiral or a fresher infusion spiral to enhance the flavor imparted to the wine without having to fish around in the container for the infusion spiral.

The present invention relates to an apparatus and method for shaving the inside of barrels. In particular, the present invention relates to reconditioning used wine barrels by shaving the inside surface to a predetermined depth, ready for re-crozering, toasting, and re-use. Conventional shaving methods typically involve routing the internal surface by hand, but this technique is problematic in that it is a very slow process, the quality of the wood is often adversely affected, and there is no way of ensuring that the surface will be shaved to the same depth across the entire surface. Therefore, the resultant internal dimensions of the barrel are not reflective, relatively, of the original barrel surface. The apparatus of the present invention includes a scanning means adapted to scan the internal dimensions of the barrel, and a cutting means adapted to shave the internal surface to a predetermined depth relative to the scanned internal dimensions.
