A method for improvement of defrosting quality of fast frozen fruit and vegetable using low frequency ultrasonic wave, characterized in utilizing ultrasonic wave assistant freezing in the fast freezing process of fruit and vegetable which comprises picking out, cleaning, cutting, scalding the fruit and vegetable material as well as inactivation of enzyme, cooling, freezing and ultrasonic wave assistant freezing and packaging.

The invention relates to a product comprising: water; and an emulsirler; characterised in that at a temperature below 0°C, the composition comprises at least an amount of unfrozen. The product is useful as an ingredient in frozen food as it enhances microwave thawing.

The invention comprises a method of thawing meat frozen in meat blocks (1) and comprising an apparatus for initial separation of the meat block (1) before the meat block (1) is placed in a rotating container (7), said meat block (1) being subjected to pressure before being treated in the rotating container (7), said pressure initiating a separation process of the meat block (1) into individual pieces (2). This pressure may be applied over the diagonals of the meat block (1). The invention also comprises an apparatus for performing the method, said apparatus comprising a number of pistons (3, 4, 5, 6) which either cooperate in pairs or cooperate with a firm opposite face for applying pressure to the meat block (1). The faces of the pistons (3, 4, 5, 6) may be plane, or they may comprise elevations or depressions as well as be adapted to act over at least one of the diagonals of the meat block (1).

The present invention relates to an edible water-in-oil micro-emulsion for enhanced thawing of a food product in a microwave oven. Said water-in-oil micro-emulsion when at a temperature below 0 DEG C comprises water in super cooled state which when subjected to microwave energy at a temperature below 0 DEG C acts as a microwave energy absorber. The invention also relates to a food product comprising such as a micro-emulsion and a method for providing it.

A method for thawing frozen, ground fish meat, which comprises substantially evenly crushing a mass of frozen ground fish meat and heating the pulverized meat to conduct thawing. A process for preparing the raw material of fish-paste products is also provided wherein the thawed ground fish meat is mixed with additives under agitation by means of a pin mixer. Further, a process for preparing boiled fish paste is also disclosed wherein the raw material of fish-paste products prepared by the above process is molded, energized to raise the temperature by taking advantage of the internal resistance of the ground fish meat, heated in situ for predetermined period of time, and then heated. These processes can be widely utilized in the field of the production of foods using frozen ground fish meat.

A process for preparing the raw material of paste products, comprising the first step of pulverizing frozen ground meat into a particulate frozen ground meat, or thawing and cutting frozen ground meat to prepare a thawed ground meat and the second step of mixing the ground meat prepared in the first step by means of agitating means (provided that when the frozen ground meat is thawed in the first step, a cake mixer is used as the agitating means). This process can efficiently provide raw material for the production of high-quality paste products.

A system and method for deglazing or defrosting items, for cleaning wares, and/or for thermalizing/rethermalizing food items. The system includes a tank for holding fluid and a wash pump for creating a rolling washing action within the wash tank. The method includes placing items into the fluid so that as the fluid rolls within the wash tank, the items become deglazed or defrosted. The system further includes a discharge manifold with a plurality of discharge jets, a flow balancer for equalizing flow to multiple sections of the tank, and a diffuser plate for equalizing flow within a section of the tank. The various components of the system can be removed for cleaning, inspection, and/or replacement. The discharge manifold is accessible for removal and is configured to be easily cleaned.
