This invention relates to a process and a device for producing an even and homogeneous coating of liquids or powders on small free-falling objects that are not earthed. The process and the device according to the invention are primarily intended for surface coating of medicinal products and foodstuffs. According to the invention, the non-earthed objects are positively or negatively charged in a suitable manner or not at all and are then caused to fall freely and individually through a substantially cylindrically-shaped zone (2), mainly along its central axis, where the coating substance, having first, in a suitably manner, been charged with a charge of opposite polarity to that of the objects or if these are not charged, with a positive or negative charge, is sprayed onto the particles by means of at least one or preferably at least two spray nozzles (3) which are placed peripherally around the zone (2) and directed mainly towards the central axis thereof, whereby the coating substance is attracted to the object because of the potential difference between them, and an even, homogeneous surfrace coating is obtained.

In the production of ice-cream cones it may be desirable to apply a coating of drystuff particles on the outside of an ice dome (12) projecting from the cone (14), which in a known manner may be effected by pressing down the inverted cone against a spherical, resilient membrane (6) having an overlying layer of the particle material (8). However, this technique implies certain limitations, and the invention proposes a modified technique, whereby it is possible to coat domes (12) projecting further from the cone than corresponding to the projection of a half ball, partly with the use of compressed air for pressing the membrane (6) against the dome surface and partly by arranging for a vertical movability of the membrane (6, 4) relative to the overlying layer of the particle material (8).

Breaded food products are prepared by adhering an edible dust to the surface of a food product, exposing the edible dust to sufficient stream to adhere the steamed dust to breading, and then adhering breading to the steamed dust. This invention also encompasses an apparatus for exposing the edible dust on the surface of a food product to steam. The apparatus has a motor-driven conveyor (36) that transports food product through a housing (26) and steam manifold device (58, 60) for releasing steam in the housing. The exposure of the dusted food product to steam may be controlled by adjusting the speed of the conveyor or the pressure of the steam in the manifold. Breaded food products prepared in this manner, including for example breaded chicken, are also encompassed by this invention.

Des Weiteren ist eine Aufladeeinrichtung (14) vorgesehen zum elektrostatischen Aufladen des zu versprühenden bzw. versprühten pulverförmigen Zusatzmaterials (1). An apparatus to apply seasoning to a foodstuff comprising a plurality of individual food portions comprises a rotatabie drum supportable in a generally horizontal position and having an inlet at a first end, an outlet at a second end and a bore extending through the dram from the inlet to the outlet, with a substantial portion of the bore having a generally frastoconical interior with a larger diameter end of the frostoconical interior disposed proximal to the inlet and a smaller diameter end of the frustocomcal interior portion disposed proximal to the outlet. In one embodiment, the frustoconicai interior portion extends substantially from the inlet to the outlet and converges in that direction. In another embodiment, the general ly frastoconical portion extends from a generally cylindrical interior portion, that is intermediate the inlet and the frustoconical interior portion, to the outlet and converges in that direction.

A system and method of flavoring food includes a metering tray coupled to a frame. The metering tray may be configured to hold a food flavoring. A metering roller also may be coupled to the frame. An exterior axial surface of the metering roller may define a plurality of indentations, which may be configured to capture the food flavoring as the metering roller rotates. The system may also include a metering blade and a displacement; each may be coupled to the frame. The metering blade may be configured to level the food flavoring as the food flavoring is dispensed by the plurality of indentations of the metering roller as the metering roller rotates. The displacement blade may have a plurality of teeth that are configured to correspond to the plurality of indentations. The teeth may be configured to positively displace the food flavoring as the metering roller rotates.

Confectionary image design system including a graphical user interface through which a user defines a pattern of confectionary pieces to be arranged on a substrate. A computer processor controls the graphical user interface through which the user defines the pattern, and provides instructions for arranging the confectionary pieces in the defined pattern. A container retains the confectionary pieces used to form the defined pattern. A robot receives from the computer processor the instructions for arranging the confectionary pieces, retrieves the confectionary pieces stored in the container, and arranges the pieces on the substrate in the pattern defined by the user.
