A process for producing a product with high content of natural vitamin C, comprising: a) Obtaining Rosa Roxburghii juice; b) Fermenting the Rosa Roxburghii juice with yeast to obtain fermented Rosa Roxburghii juice; c) Optionally, concentrating the fermented Rosa Roxburghii juice to obtain concentrated fermented juice; and d) Drying the fermented Rosa Roxburghii juice or the concentrated fermented juice to provide the product with high content of natural vitamin C. The product with high content of natural vitamin C obtained from the process contains natural vitamin C of more than 15%, even more than 20%.

A process for the manufacture of an extract of Goji berries containing zeaxanthin and/or its esters is provided, comprising the following steps: a) obtaining dried Goji berries or size reduced pieces thereof; and b) treating the dried Goji berries or the size reduced pieces thereof with an alkali solution; and c) extracting the Goji berries or the size reduced pieces thereof obtained in step b) with a solvent selected from the group consisting of ethyl acetate, hexane, heptane, petroleum ether, acetone, butane, ethyl methyl ketone, methanol, propan-2-ol and mixtures thereof; and d) removing the solvent from the extracts obtained in step c); and e) optionally cleaving the esters in the dried extracts obtained in step d); and f) optionally crystallizing the dried extracts obtained in step d) or e) in an aliphatic straight or branched C 1-4 alcohol. Preferably the process consists only of the steps a) to f) given above.

An edible coating comprising Gardenia Blue pigment is disclosed, which has a color shade h of at least 220 and a red value a* of at most -7 at the CIELAB color scale. Sugar syrup and sugar free alternatives both comprising Gardenia Blue pigment are also disclosed.

The edible coating has a color shade h of at least 95 at the CIELAB color scale and preferably also has a color value a* of at most -5 at the CIELAB color scale. The edible coating is preferably used for coating confectionary such as chocolate lentils. Also provided are precursors of such green edible coatings such as sugar syrup and sugar-free alternatives, both comprising Gardenia Blue pigment and beta-carotene.

A gardenia blue pigment is derived from a reaction of genipin with an amino acid. It is brighter than commercial gardenia blue pigment and suitable for industrial application. A process for producing the gardenia blue pigment and the use thereof in food and beverage industries are also provided.

The present invention is also directed to precursors of such green edible coatings such as sugar syrup and sugar-free alternatives, both comprising Gardenia Blue pigment and Vitamin B 2 (derivatives).
