The invention provides a substantially encapsulated food additive particle comprising: a) an inorganic, porous core in which one or more water-soluble functional ingredients are impregnated, and b) a hydrophobic, water-insoluble outer coating having a melting point of greater than 100oC and comprising one or more multivalent metal salts of fatty acids of chain length not less than 8.The particles exhibit good resistance to degradation in food articles, upon storage and during cooking but breakdown after consumption to make the functional ingredients bio-available to the body. A method of making the particles and food articles comprising the same are also provided.

The invention provides a process for the manufacture of soap forms which includes the step of treating a soap feedstock by passage through a twin screw, intermeshing, counter-rotating extruder and apparatus for the manufacture of soap forms according to the process, said apparatus comprising a twin srew, intermeshing, counter-rotating extruder, wherein the extruder comprises two oppositely-threaded, closely intermeshing screws, the screws being non-matching and such that the ratio of the length to the diameter is greater than 1:1, mounted for rotation within a barrel having a first end and a second end, said screws having a minimal screw-to-screw and screw to barrel clearance such that as the feedstock passes along at least a part of the barrel from said first end and towards said second end it is divided into a plurality of discrete, substantially C-shaped segments bounded by the screw and barrel surfaces and conveyed in a path whereby the bulk of the feedstock move substantially parallel to the rotational axis of the screws.

A pressure plate is provided with corresponding cone for use with an extruder. The plate comprises twin worms/screws which may be tangential or intermeshed, co-rotating or counter-rotating. The plate has sets of a plurality of substantially coaxial circular of polygonal slits or openings that are either tangential to each other or intermesh into one another. Each slit is provided with at least one supporting rib member. The plate and cone are arranged such that the open cross-sectional area continuously decreases from the exit of the plate to the exit of the cone, leading to one or more die orifices. Also provided is a process for manufacture of bars extruded from an extruder using such a plate, as well as an installation for manufacture of such bars. The bars may comprise surfactant and typically such bars have reduced cracking and mushing tendencies.
