The invention herein provides an apparatus and method of controlling an electrochemical treatment process where treatment is performed in a flow cell to ensure that a controlled dose of electrical energy or current is delivered to all volumes of the liquid being treated. In addition the invention provides for further optimization of the dose based on other factors and sensor inputs. This invention also provides a method to estimate, display and record a forecast of process efficacy such as disinfection, oxidation or other desired treatment that otherwise cannot be measured in an online manner.

A cell for direct treatment of liquid using electrolysis uses a modular construction of electrode plates (112) and spacer assemblies (108, 132) positioned between end plates (112). Changes in the liquid flow capacity of the cell may be made by changing the number of module housing sections (108) and electrode plate assemblies (112). The design includes electrode plates that lock into a mating module housing section (108) to resist the pressure of the fluid being treated. The design further provides for multiple fluid flow paths and for automatic cleaning of the cell using standard clean- in-place methods.

Es wird ein Verfahren zum Behandeln von Lebensmitteln, insbesondere auf pflanzlicher Basis, wie Gemüse, Salat, Obst und dergleichen, vorgeschlagen, wobei die Lebensmittel gewaschen und desinfiziert werden. Um für eine einwandfreie und gesundheitlich unbedenkliche Desinfektion der Lebensmittel unter Vermeidung einer oxidativen Beeinträchtigung derselben zu sorgen, sieht das erfindungsgemäße Verfahren die folgenden Schritte vor: a) Bereitstellen einer insbesondere wäßrigen Lösung eines oxidativ wirksamen, hypochlorige Säure (HOC1) und/oder Hypochlorit (OCl - ) enthaltenden Desinfektionsmittels; b) Bereitstellen einer insbesondere wäßrigen Lösung wenigstens eines gesundheitlich unbedenklichen Reduktionsmittels und/oder Antioxidationsmittels, wobei das Reduktions- bzw. Antioxidationsmittel eine hinreichende Konzentration aufweist, um die oxidative Wirkung des Desinfektionsmittels zu neutralisieren; c) zunächst Inkontaktbringen der Lebensmittel mit dem Desinfektionsmittel in unverdünnter oder verdünnter Form; und d) sodann Inkontaktbringen der Lebensmittel mit der Lösung des Reduktions- bzw. Antioxidationsmittels. Anschließend können die Lebensmittel z.B. getrocknet und gegebenenfalls verpackt werden.

The shelf life of a comestible liquid is prolonged by passing the liquid through an electrolytic cell. Electric current travels from one electrode to the other through the liquid. The electric current destroys bacteria present in the liquid. The current causes the osmotic balance of the bacteria cells to be disrupted causing the cell to either implode or explode.
