    摘要: The present invention relates to compositions and processes for preparing microbially stable edible products from dough and to processes and compositions for preparing edible dough-based products having improved mold resistance, extended shelf-life and good organoleptic properties. In accordance with the invention combination of an acetate component and a propionate component, in particular combinations of a (buffered) vinegar and a propionate component prepared by fermentation can be applied in bread and other baked dough products to accomplish satisfactory mold inhibitory effects at dosages that do not (negatively) affect the organoleptic properties of the product, such as flavor, taste or aroma. Hence, the present invention provides new preservative systems, the uses thereof for inhibiting mold in baked dough products, and the baked dough products accordingly obtained.

    摘要: Disclosed therein is a method for sterilizing a product and comprises mixing a product with (i) algae or with an algae derivative; and (ii) a disinfectant adapted for Agrobacterium tumefaciens . The product includes one of grits, polenta, corn meal, corn flour and orange juice. The algae is one of Rhodeella maculata, Boekelovia hooglandii, Goniochloris sculpta, Chloridella simplex, Ascophyllum sp., Fucus sp., Himanlhalia sp., Undaria sp., and Laminaria sp . The algae derivative is an extract form algae containing fatty acid, the fatty acid ranging from C12 to C22. The disinfectant includes one of TiO 2 , copper, copper-containing sulfur doped TiO 2 ; and copper, silver and nickel-enriched TiO 2 .

    摘要: Fresh ground poultry meat is preserved by packaging fresh ground poultry meat in a sealed package together with one or more non-synthetic antimicrobials and pressurizing to an elevated pressure of from about 55,000 to about 65,000 psi pressure, maintaining the elevated pressure on the packaged fresh ground poultry meat for a time of from about 3.5 minutes to about 6 minutes and at a temperature of from about 30° to about 45° F. The non-synthetic antimicrobial is present in an amount effective to enhance the effectiveness of the application of the pressure to the packaged fresh ground poultry meat in reducing or eliminating pathogens.
