A conveyor (16) moves food product (18), such as pies or cakes, within a cutting range of a knife positioning assembly (44). The knife positioning assembly (44) supports an ultrasonic knife assembly (52) which has a blade (54) adapted for cutting the food product (18). The knife assembly (52) is disposed above the conveyor (16) and is moved to the food product (18) in a cutting position therewith when the conveyor (16) has moved the food product (18) within the cutting range. The knife assembly (52) is movable through at least two axes by the positioning assembly (44) for positioning and cutting with the blade (54).

The present invention includes a chain type cutting apparatus for continuous cutting of a rope of a center-filled consumable product into individual pieces, which includes a first continuous elongate rotary chain with a plurality of first open die cavity portions and a second continuous elongate rotary chain with a plurality of second open die cavity portions. The first and second die cavity portions are mutually engageable to form a closed die cavity about a rope of center filled consumable product, forming pieces. The invention incorporates four main variables, dwell time, chain length, chain speed and the number of closed die cavities in simultaneous engagement. These four variables can be altered to increase the output of the product, as well as maintain a satisfactory seal of the center- filled consumable product.

Disclosed is a method for cutting pieces having a predefined length, i.e. sticks, out of a mass of cheese. In said method, the mass of cheese is shaped into a wide cheese bar (1, 11) having a predetermined thickness in a continuous process, the cheese bar (1, 11) is fed to a cutting device by means of a belt conveyor (2) at a certain conveying rate, the cheese bar (1, 11) is first cut into parallel longitudinal strips using longitudinal cutting means (5), and the longitudinal strips that lie parallel next to each other on the belt conveyor (2) are cut into pieces using a transverse cutting means (4) comprising a transverse cutting knife (12) which extends across at least part of the cheese bar (1, 11). The transverse cutting knife, the movement of which is adjustable, is conveyed along with the cheese bar (1, 11) at the conveying rate during the transverse cutting process. The pieces of cheese obtained following the longitudinal and transverse cutting processes remain on the belt conveyor (2) in order to be discharged.

Modified slicing shoes and method for making food product shavings. A conventional slicing shoe for insertion into a slicing head assembly used in conjunction with a centrifugal type slicing machine is modified. The modified slicing shoes comprise a cutting edge having top and bottom ends that protrude towards the interior of a slicing head assembly as a vertex protrudes away from the interior such that the blade is not confined to one plane. In one embodiment, the slicing shoe blade cutting edge and its components comprise a V-shape having an angle that ranges from between about 90° to about 140°. In a second embodiment, the slicing shoe and its components are curvilinear having a curvature ranging from about 1.5 cm to about 2.0 cm. The shape of the blade and its corresponding components allow for the production of snack chips having folded or curled shapes.

The lattice cutting plate is orbitally driven for engaging in succession each of the multiple knives thereon with the vegetable product to form lattice cut slices wherein successive generally corrugated cuts are angularly oriented typically perpendicular to each other, and further wherein the depths or troughs of the corrugated cuts on opposite sides of each slice intersect in the preferred form to define a pattern of corrugations interrupted by small openings.

A method for reducing cost and weight in paint roller manufacturing processes and other continuous processes for producing tubular goods from polymers. The method may utilize a perforated substrate such as a perforated polypropylene strip or may include a perforating step which removes overage from an unperforated substrate. An unperforated substrate, which may be of a thinner gauge than the perforated substrate, is fed onto a mandrel. The perforated substrate is fed onto the unperforated substrate to form a tube. Adhesive is applied upon the outer surface of the perforated substrate. A cover may be applied about the tube, and the resulting product is then cut into finished-size paint rollers. The removal of the overage results in a reduction in the weight of the paint roller. In certain embodiments the overage from a perforation step is collected, and may be reused in a subsequent implementation of the method or resold.
