The present invention concerns a device (10, 20, 30) for the elimination of residues (2) of fermentation/re-fermentation in an alcoholic liquid, the device resulting to be applicable to a container (1) suitable for containing said alcoholic liquid and foreseeing a channel (13, 23, 33) for the collection of the residues. In an embodiment of the invention a shutter element (14, 24, 34) is foreseen, which is mobile between an open position, in which it allows the passage at least in part of the liquid contained in the container into said channel, and a close position, in which it is arranged in the channel isolating a containment chamber (13', 23', 33') for said residues. Alternatively, the device foresees a base (41) applicable to a container (1) and a pipe that emerges from the base (41), the pipe being realized at least in part in a folding material in such a way that said part can be folded on itself.

The method for the preparation of champagne provides for preparing a coupage and removing oxygen therefrom, preparing a fermented mixture on the basis of said coupage, champagnizing the fermented mixture in the presence of yeast, biogenerating the champagnized wine and subsequently filtering the champagnized wine which is effected on the biogeneration stage at a temperature and at a pressure appropriate to the final stage of the biogeneration. A material to be used for the filtration is characterized by such porosity that the size of pores is less than the size of a microorganism cell.

A device (1) includes an oscillating head (2) aimed at receiving and locking a capped bottle (4) of wine. At beginning, the bottle (4) has the neck (4a) turned downward, at about 45°, and during rotation of the head (2) for setting the bottle (4) top-up, a working member (6) moves an uncapping tool (7) to remove the crown cap (5) closing the bottle, when the bottle is situated beyond the horizontal position. Dregs are expelled spontaneously due to inner pressure in the bottle. The working member (6) has a closing element (8) for closing again the bottle while being oriented with the neck turned upwards at about 45°. A replenishment nozzle (80) of the device (1) can make for the level in the bottle (4) with wine and/or a suitable sugary solution.

A method for processing wine, including filling a bottle with wine, capping the bottle with a bottle stopper, the bottle stopper including a valve that has a first orientation in which sediments can flow from the bottle past the valve, and a second orientation in which the valve substantially prevents re-entry of the sediments back into the bottle, producing sediments in the bottle, centrifugally forcing the sediments in the bottle towards the bottle stopper, the valve being in the first orientation so that the sediments flow past the valve and are removed from the bottle, and moving the valve to the second orientation to substantially prevent re-entry of the sediments back into the bottle. An apparatus for removing sediment is also disclosed.

The method for collecting and separating sediments produced by fermenting by allowing the sediments to flow into the collection receptacle and then trapping the sediments in the collection receptacle.

Die Erfindung betrifft einen Flaschenverschluss zum Verschließen einer Flasche (42), mit einem Dichtkörper (12), der ausgebildet ist zum Verschließen einer Flaschenöffnung (48) der Flasche (42), und einer Sicherungsvorrichtung, die ausgebildet ist zum formschlüssigen Verbinden des Dichtkörpers (12) mit der Flasche (42), wobei der Dichtkörper (12) und die Sicherungsvorrichtung durch Drehen relativ zueinander aus einer Verschluss-Stellung, in der der Dichtkörper (12) formschlüssig mit der Flasche (42) verbunden ist, in eine Freigabe-Stellung, in der der Dichtkörper aus der Flaschenöffnung (48) entfernbar ist, bringbar sind.
