The installation comprises control means adapted to ensure that only meat products which are to be treated by said one or more additive-adding stations are transferred to the second conveyor device, while other products, which are not to be treated, are conveyed onwards along the first conveyor track.

The invention relates to a plant for the continuous processing and packing of meat products comprising: an injection station (10); a maceration station (20) which includes a rotating squeezing drum (22) and towed settling tanks (24); and a packing station (30). Said stations are connected by means of: an accumulation and loading unit (40) for connection to the drum (22), said unit being located between the injection station (10) and the maceration station (20); a reloading unit (50) which is disposed between the station (20) and the unit (40); and a unit for transfer (60) to a feed hopper (62) for said packing station (30). The inventive plant also comprises an automatic cleaning unit (70) for the tanks (24). A control centre co-ordinates the operating stages of the stations and units in order to maintain a continuous operating cycle while providing time for each station, unit and part to be cleaned during said cycle.

The holder bears hollow needles oriented transversely with respect to the mounting member and can move to and fro transversely to the mounting member for inserting the needles into the product or, alternatively, for extracting the needles from the product. Said needles have at least one discharge orifice near their free end and one feed orifice at some distance from said free end and are accommodated in the holder such that they can be displaced in the longitudinal direction between a position projecting relatively far out of the holder, in which the feed orifices are blocked, and a position projecting relatively less far out of the holder, in which the feed orifices have a flow connection to a liquid supply. In addition, locking means are provided for locking the needles in their position projecting relatively less far out of the holder.

The aim of the invention is to create a device and a method which make it possible to simultaneously introduce exactly defined, even very small quantities of water, brine, preservatives, seasoning liquids, and/or other liquids in a manner that is adapted to the anatomy of the body of the slaughtered animal, even into meat containing bones and/or cartilage or connective tissue, within a very short period of time on almost any conveying unit, even an existing one, and even on a slaughtering conveyor belt, without using any needle while being highly effective and highly reliable, having a robust structure, and providing minimal tolerance of the injected quantity. Said aim is achieved by a device for introducing liquids into meat, comprising a base frame (1). The object can be achieved by using a pickle injector which is provided with a high-pressure liquid generator constituted of a plunger pump or the like, a coherent stream injection nozzle for injecting the brine for curing and a pressure control mechanism which can raise an injection pressure gradually from 0 or a low pressure while injecting the liquid substance when the brine for curing is injected from the nozzle to the green meat. In addition, for pressure control, a servo motor or the like can be used.
