This invention relates to a technology for modifying gum arabic to increase its emulsifying ability, and provides a method which does not give rise to such troubles as the gum arabic agglomerating to form syrupy masses, sticking to the vessel, dehydration, or charring in the course of processing. Amodified gum arabic with in an increased emulsifying ability can be obtained by heating a roughly crushed or broken solid of gum arabic at a temperature not below 40°C in an atmosphere having a relative humidity of 30-100%. The modified gum arabic can be used with advantage as an emulsifier for beverages, confectionery inclusive of chewing gums, oily flavorings, oily colors, and fat-soluble vitamins, among others.

The stress may be in the form of physical exertion, mental exhaustion, disease states and the like. In one embodiment, the invention relates to a nutritional composition comprising a structured glyceride component and an antioxidant system. This nutritional composition has been shown to be highly effective in reducing immune system down regulation or dysregulation as a result of stress.

An enteral composition for paediatric patients. The composition is made up of a protein source, a carbohydrate source and a lipid source. The protein source provides 10 % to 14 % of the total calories and is in the form of casein and whey. The lipid source is a mixture of medium and long chain triglycerides of which at least 20 % are medium chain triglycerides. The composition may be used for providing nutrition to a paediatric patient; especially patients suffering from cerebral palsy or recovering from trauma, burns or surgery and having moderate needs for tissue repair.

This invention relates to a palatable elemental nutritional formula that is nutritionally complete for humans with specialized dietary needs. The nutritional of the present invention uses specific free amino acids to provide the source of amino nitrogen (protein equivalents) and a special blend of fats that provides 38 to 50 % of the total calories in a pleasant tasting formula. The nutritionally complete formula of this invention is useful for children having multiple protein allergies, short gut syndrome, sick gut, diarrhea and the like. More specifically, the nutritional product, in accordance with this invention, utilizes L-asparagine monohydrochloride and L-glutamine in place of L-aspartic acid and L-glutamic acid, respectively. In addition, the source of fat comprises soy, fractionated coconut oil (medium chain triglycerides), high oleic safflower oil and esterified glycerol emulsifiers. The level of fat calories is about 38 to 50 % of total calories, which produces a product having a low osmolarity and provides required energy requirements in a small volume.

In a product free of citric acid or citrates, for oral ingestion, the taste of arginine is counteracted by lactic, malic or adipic acid; in a formulation for tube-feeding, citric acid and citrates in a specific ratio controls the product's stability. The ratio of calcium to phosphorus is controlled, as is the caloric distribution and water content; the amounts of vitamins and minerals included provide a nutritionally complete formulation.
