PROBLEM TO BE SOLVED: To provide an emulsion composition containing pigment originated from phycophyta belonging to the genus Haematococcus wherein pigment originated from phycophyta Haematococcus can be stored at high stability, keeping storage stability of an emulsion particle diameter. SOLUTION: An emulsion composition having an average diameter of 1-200 nm comprises pigment originated from phycophyta belonging to the genus Haematococcus and two or more kinds of antioxidants, and a high concentrated emulsion having an average particle diameter of not less than 200 nm comprises 0.1 mass% or more of a pigment originated from phycophyta belonging to the genus Haematococcus and two or more kinds of antioxidants. PROBLEM TO BE SOLVED: To provide a new blue dye having good stability and enabling utilization to foods even under acidic conditions under which a conventional natural blue dye could not be used, and blue collagen or gelatin which is produceable without passing through a deashing step. SOLUTION: The blue dye is obtained by using one or more kinds of materials selected from scale, skin, surface viscous fluid and fins of fishes having blue back as raw materials and extracting the raw materials with a solution or acidic solution containing an aminocarbonate-based metal chelating agent. The blue collagen or gelatin is obtained by using one or more kinds of materials selected from scale, skin, surface viscous fluid and fins of fishes having blue back as raw materials and extracting the raw materials with an acidic solution. PROBLEM TO BE SOLVED: To provide a food comprising nasunine with inviting flavor and good taste by extracting unstable aqueous solution of the coloring matter in a weakly acidic condition of pH≥4 without causing browning or color decreasing solving problems on development of nasunine containing food that the anthocyanins including nasunine extracted from pericarp of solanum are unstable coloring matters and the aqueous solution thereof causes browning and color decreasing with deterioration of ingredients, change of characteristic odor and taste of the powder of pericarp of solanum, while the coloring matters are stabilized by keeping the pH of the solution at ≤2.5, the solution not causes browning but the taste is too much sour and is not drinkable or edible. SOLUTION: The food comprising nasunine with inviting flavor and good taste is obtained by extracting anthocyanins including nasunine by soaking powder of pericarp of solanum in an extracting solution for nasunine obtained by extraction of powder of perilla and powder of plum pulp, having weakly acidic character of pH ≥4, without causing browning and color decrease of the unstable coloring materials. PROBLEM TO BE SOLVED: To provide an edible coloring material such as edible or drinkable ink hard to cause clogging: and to provide a method for producing the edible coloring material. SOLUTION: The edible coloring material comprises water-soluble liquid containing a natural pigment, and is reduced in an amount of macromolecular components. The natural pigment raw material is dissolved in the edible coloring material, and is produced by processes comprising a precipitation process where solid is precipitated through heating a pigment raw material solution containing water and an edible organic solvent incorporated in the water so as to have temperature of ≤50°C, and a collection process where the precipitated solid is eliminated from the mixture to collect a transparent solution. The edible coloring material is reduced in the amount of water-soluble proteins or water-soluble polysaccharides mixedly dissolved in the pigment solution when extracting the natural pigment, so that clogging is hardly caused because precipitation of the solid or increase in viscosity at a portion, such as an ink jet outport, where liquid components are easy to be vaporized is prevented owing to these macromolecular components.
