The present invention relates to a process for optimizing the storage stability of a freeze dried bacteria-containing product obtained from a bacteria-containing concentrate, wherein the process is carried out at a pressure which will provide a sublimation temperature which is at least 10° C. above the melting point of the frozen bacteria-containing concentrate. Further, the present invention relates to the freeze dried concentrates per se.

Also described are methods for increasing the amount of available sugar from animal feed comprising non-starch polysaccharides (NSP), comprising adding to the animal feed a Bacillus composition comprising at least one Bacillus strain, which compositions produces 120 hexose equivalents (μmol/ml) or more when measured by the method described herein. Also described are animal feeds comprising 14% (w/w) or more of non-starch polysaccharides (NSP) if the animal feed is for a piglet, lactating sow, broiler or layer or 19% (w/w) or more of non-starch polysaccharides (NSP) if the animal feed is for a grower-finisher pig or gestating sow, and a Bacillus composition comprising at least one Bacillus strain, as well as methods and uses relating thereto.

The present invention relates to a method for producing cheese with good flavour, especially low-salt cheese by using a lactic acid bacteria (LAB) starter culture which is glutamate decarboxylation (GAD) negative. The method may additionally involve inoculating the milk substrate with a GAD-negative Lb. helveticus strain having a high lytic and peptidolytic activity, which further releases glutamate into the milk Additional application of camel chymosin reduces bitterness.
