A process for quickly and reproducibly obtaining .alpha.-L-aspartyl-L-phenylalanine methyl ester with controlled water content is disclosed. Wet crystals of .alpha.-L-aspartyl-L-phenylalanine methyl ester obtained by crystallization are subjected to a drying step to adjust the water content to not more than 5 wt %, and subsequently a gas adjusted to a temperature of 20-80.degree. C. and relative humidity of 20-90 RH % is contacted with the dried crystals to control water content.

A blood coagulation time measuring method comprising irradiating a mixture of blood plasma and reagent with a beam of specified amount of light, detecting changes in the amount of light scattered by the mixture, converting the resulting scattered light output signals to digital form at specified time interval, feeding the digital data to a computer, computing the difference between each input value and the input value immediately adjacent thereto with respect to time and storing the results, and determining the time, prior to the time at which a maximum difference value is obtained, at which a computed difference value corresponding to 1/n of the maximum difference value is obtained. The time thus determined is the end point of the coagulation time. A system for practicing this method is also disclosed.

In neutralizing an acid addition salt of .alpha.-APM in an aqueous medium, the .alpha.-APM concentration in the neutralized liquid is controlled to fall within the range of from 3 to 10 wt. % at the finish of neutralization. C. and neutralization is effected with stirring to the isoelectric point of .alpha.-APM; or after the neutralization, the neutralized liquid is heated. A method of preparing .alpha.-L-phenylalanine methyl ester and its hydrochloride, which comprises dissolving .alpha.-L-aspartyl-L-phenylalanine .beta.-methyl ester in a methanol/hydrochloric acid mixture solvent which contains, when hydrochloric acid is expressed in terms of concentrated hydrochloric acid and water, 0 to 20% by volume of methanol, 8 to 55% by volume of concentrated hydrochloric acid and water (balance) in a concentration from 0.01 mol/dl to 0.3 mol/dl; holding the solution at 0.degree. to 60.degree. C. to effect intramolecular ester exchange reaction and crystallize out the formed .alpha.-L-aspartyl-L-phenylalanine methyl ester as its hydrochloride; isolating the hydrochloride; and obtaining, when required, the free ester by neutralization with an alkali, is disclosed.
