The invention relates to a method for enhancing the product quality and product safety of meat or foodstuffs of animal or vegetable origin by means of selective pressure and temperature treatment. According to the invention, fresh or warm meat of any form is packed in portions using a film container which has recoil abilities and therefore any liquid possibly escaping from the packed product distributes itself uniformly over the surface of the product. The packed portions are then placed in a container-like treatment device which has, mounted on the surfaces coming into contact with the product, a plurality of cushions, tubes or similarly elastic structures to which a pressure and temperature control medium may be applied. The cushions, tubes or similarly elastic structures are filled with the pressure and temperature control medium in such a manner that substantially uniform pressure forces act on the packed product and the packed product can be held in a predefined temperature range which is maintained for a predetermined period. On expiry of the predetermined period, the packed product is then rapidly cooled by exchanging the temperature control medium.

The spacer assembly includes a grid-like framework upon which are mounted a plurality of non-metallic support pads adapted to accept the corners of adjacent trays laid thereon in a rectangular pattern. The framework is fabricated of a light metal functioning structurally only to position the support pads. A spacer assembly is laid atop each succeeding layer of trays and the tray corners are compressed a predetermined amount until the pads in a vertical column are in contact, whereby the pads bear the load of the trays stacked thereabove.

A plurality of stacked trays 2 are accommodated within a rotary housing 3 rotatably supported in a sterilization vessel 1 (FIG. 7a). A medium support port 42a is sealingly engaged with an inlet port 25. Then, a flow of hot water is supplied to the inlet port 25. Thus, a spray hot water is ejected from spray nozzle 23 for heat sterilizing products on the trays 2. Thereafter, a spray of cooling water is ejected from the spray nozzle 23 for cooling the products. The rotary housing 3 is rotated to a position in which inclination of the trays 2 exceeds 90 degrees. Then, the rotary housing 3 is counter-rotated to a position in which the trays 2 are inclined at a vertical orientation (FIG. 7b). A hot gas supply port 37a is sealingly engaged with the inlet port 25 so as to supply a flow of hot air into the inlet port 25, whereby the products may be dried.
