The pump pumps a diary product through the microwave chamber; the solid-state radio frequency source includes one or more antennas and/or waveguides; the processing apparatus has a sensor and a control system, the sensor is configured to measure at least one property of the dairy product and at least one property of radiation reflected from the diary product, and a signal from the sensor is utilized by the control system to control the solid-state radio frequency source; a chamber is arranged between the microwave chamber and the solid-state radio frequency source so that the solid-state radio frequency source is free from contacting a wall of the microwave chamber, the chamber is cooled by a cooling unit that is configured to cool the radio frequency source.

A device and a method are for sterilization of milk from livestock such as cows, sheep or goats. The milk, prior to an irradiation with UV-C light through a light translucent barrier, is homogenized since the milk is exposed to ultrasound. The milk simultaneously to or after the homogenization is exposed to an electrical field, such as a field with changing polarity, where polarity change and field strength are chosen such that the milk in the electrical field is heated due to the milk's resistance.

Systems and methods for treating unwashed fruit with fruit bloom that provide a first ultraviolet (UV) energy with one or more flashes using a first set of one or more flash lamps to a first surface of each of a plurality of blueberries and provide a second UV energy with one or more flashes using a second set of one or more flash lamps to a second surface of each of the plurality of blueberries. The system determines a fruit bloom level associated with the plurality of blueberries after provision of the first and second UV energies and determines an adjustment to a parameter of at least one of the first and second UV energies based on the fruit bloom level. The system provides UV energy with the adjusted parameter to a subsequent set of blueberries to remove microorganisms from the blueberries while retaining fruit bloom.

The present invention relates to a process for fast and homogeneously heating a liquid product to a predetermined temperature by means of resistive heating. Sufficient and effective microbial inactivation is achieved upon applying an electrical field strength of between 0.1-5.0 kV/cm for a prolonged period of time, thus by selecting a relatively low electrical field strength and a pulse duration of at least 10 microseconds while the maximum temperature of the liquid product autonomously remains below 92° C. during the resistive heating. The present invention further relates to said process wherein the liquid product is pre-heated prior to subjecting the liquid product to the process. The present invention also relates to the liquid product obtainable by the process according to the invention.

A crumb is manufactured by a process including adding an aqueous flour mixture into an extruder, partially extruding the aqueous mixture through the extruder, adding an aqueous gelling agent to the extruder at a point downstream of the start of the extrusion of the aqueous mixture through the extruder to form a resultant mixture of the aqueous mixture and the aqueous gelling agent in the extruder, and extruding the resultant mixture at a temperature greater than 100° C. to form an extrudate. The extrudate is allowed to expand, dried and milled to form the crumb, which has moisture-resistant properties particularly well-suited for use on frozen, microwavable food products.

The method includes: subjecting the vegetable to mechanical size reduction; heating or freezing the vegetable for a pre-determined period; and bringing the softened vegetable product into contact with one or more reactive oxygen species selected from: peroxides; superoxides; and ozone.

This invention relates generally to ultrasonic extrusion apparatus, methods and products. A flowable substrate may be supplied by an infeed to an extrusion chamber having an ultrasonic horn. The flowable substrate contacts the ultrasonic resonant horn and receives ultrasonic energy before and/or as passing through an extrusion orifice. Suitable flowable substrates may include meat emulsions, pomace solutions, and dough. The extruded product may have virtually any solid or hollow shape. The flowable substrate may form a shape-retaining product that may be cut without significantly deforming.
