摘要: A container holder adapted to hold a container between two spaced apart prongs is provided herein. The prongs clamp the container with a clamping force large enough to hold the container, but small enough to avoid damaging the container. The prongs may be spaced apart to fit different-sized containers, while the clamping force still meets these criteria. The clamping force may be provided by a substantially constant-force spring or a variable-force spring. In a method according to the present invention, a stack of nested containers is held in a container holder as described, for subsequent removal of a selected container from the stack.

摘要: An automated food processing system and method are provided that allow food to be dispensed, fried and packaged in a suitable container, which may be an individual portion-sized container. In one embodiment, the system includes separate automated modules for dispensing, frying and packaging the food. In one embodiment, an automated dispensing device dispenses a predetermined portion of food from a bulk storage container or food dispensing magazine to an automated fry device that can include at least one circular fry wheel having a plurality of food containing compartments. After the food is fried it is dispensed from the fry device to an automated packaging device. The automated packaging device dispenses food to a container that may be an individual portion-sized container that is retrieved, erected and held into position for filling by an automated container handling system. A conveyor system transports the filled container to a suitable pick-up location.

摘要: A device and method are provided for dispensing a quantity of food to be cooked. The device includes a freezer, a storage container located in the freezer, means located in the freezer for dispensing a predetermined quantity of food from the storage container into a secondary container, and means for dispensing the quantity of food from the secondary container to a location outside the freezer. The means for dispensing a predetermined quantity of food may be, for example, a magazine with dual spiral flights for dispensing food items one at a time, or a vibratory conveyor cooperating with a device for determining a quantity of food in the secondary conveyor and means for terminating the dispensing when a predetermined quantity of food is sensed. The secondary container may have an opening in its bottom and be movable laterally to align its opening with an opening in the freezer.

摘要: An apparatus and method of treating eggs and other food products and a method and apparatus for releasing an egg and other food products from a food-retaining ring are provided. The apparatus includes one or more food-retaining rings suitable to be disposed on a treating surface; and a ring shaped release tool, the exterior perimeter of the release tool being adapted to fit closely to the inside perimeter of the ring. The method of treating eggs and other food products comprises: adding a food product to a volume defined by an interior of a ring disposed on a cooking surface; treating the food product to form a self-supporting mass; and inserting a complementary-shaped release member within the ring containing the self-supporting mass, the release member being adapted to fit closely to an inside perimeter of the ring.

摘要: A method is provided for storing a cooked food in a flexible-walled container having an opening. The method includes placing a quantity of food in a flexible-walled container and submerging at least a portion of the container in a liquid with the opening being located so that liquid does not enter the opening. At least the lower portion of the container is maintained in the liquid and the food is maintained in the container below the surface of the liquid. The liquid collapses the container to seal the container. The temperature of the liquid may be maintained at a non-ambient temperature to heat or cool the food as it is stored. The method may also include storing the food adjacent a work surface, or at a remote main vat and transporting the rack to the work surface at which a serving that includes the food is prepared.

摘要: A commercial cooking apparatus is provided for simultaneous steaming and two-sided grilling of food items having non-uniform thickness and/or variations in nominal thickness. The apparatus includes a compressible, heat-resistant ring member, and optionally a flexible, non-stick, heat-resistant film material associated with the ring member to form a cavity defined by the inner perimeter of the ring member. A cooking method is also disclosed, wherein a food item and a quantity of water are introduced into the cavity, and the food item is simultaneously cooked by the heated upper and lower platens of a conventional clamshell grill or similar apparatus and by steam generated by heating the water.

摘要: A clamshell type grill having an upper cooking platen mounted on a platen support arm for swinging movement between a lower cook position overlying a lower cooking platen and a raised position inclined upwardly from the lower cooking platen. The upper platen is manually operable to its lower cook position in which an arm stop in the arm engages an arm stop abutment and a pneumatic clamp cylinder is arranged to press and hold the platen support arm in its lower cook position. The upper platen is mounted on the platen support arm for limited floating movement in a direction perpendicular to the upper platen and adjustable platen stops on the platen support arm are arranged to engage platen stop abutments on the upper platen to limit downward movement of the upper platen to a preset lower position relative to the platen support arm and thereby control spacing of the upper platen from the lower platen.
