    摘要: Directed jets of temperature controlled gaseous fluids are applied to irregularly shaped products, such as food portions, to subject discrete areas of the surface to a very high heat transfer rate and to cause these areas to be passed over surfaces of the product at a proper rate to obtain over-all surface effects such as crisping, browning, searing or freezing.The cooking apparatus comprises a generator adapted to supply microwave energy for heating the interior of a food product in combination with apparatus to direct spaced discrete high velocity jets of heated air to impinge against exterior surfaces of the food product. A conveyor is employed to provide relative motion between each of the sources of heat and the product for averaging cooking through the product by reducing effect of RF standing waves and simultaneously sweeping the jets of air over the product at proper rate to heat all exposed surfaces.

    摘要: A method and apparatus for cooking food products wherein a plurality of spaced pumps are arranged to circulate fluid over heating elements of different temperatures spaced in successive planes longitudinally of a cooking trough through which the food product is moved. Jets of heated fluid are introduced into the cooking trough to impinge surefaces of the product, the heated fluid being removed from the cooking trough at spaced locations intermediate ends thereof and circulated across the heating elements for introduction back into the trough such that distinct heating zones of different temperature are formed longitudinally of the trough through which the product is moved at a continuous controlled rate. Floating fat and debris pass into an overflow trough extending longitudinally of the cooking trough for delivery to a drain opening.

    摘要: An apparatus to transfer heat to a product is disclosed. In one arrangement, the apparatus includes a cabinet which forms a product input port, a product output port and a product support means including a conveyor in the cabinet for transporting the product from the input port to the output port while heat is transferred to the product. Products can be accessed while on the conveyor, including putting products on the conveyor and taking products off the conveyor so that the length of time that a product is heated can be varied while maintaining a substantially constant conveyor speed. One arrangement includes a side loading door for putting products on the conveyor, taking them off of the conveyor and manipulating the products while on the conveyor so that the ordinary heating cycle is altered. The loading door includes a panel hingedly connected to the bottom edge of the opening, movable about an axis of rotation between a closed position and an open position internal to the cabinet. The loading door also includes a handle rigidly affixed to the hinged edge of the panel in such a way that the handle is substantially oppositely disposed about the axis of rotation from the panel so that the handle acts in combination with the panel as a lever for raising and lowering the panel. In one arrangement, the panel includes a tempered glass window. In another arrangement a plurality of loading doors provide preselected, identified positions along the conveyor for preselected heating times.

    摘要: The tunnel oven generally includes a plurality of spaced cooking compartments through which a conveyor transports food products. An air distribution chamber is formed in an upper portion of each cooking chamber and is vertically spaced from the conveyor. A blower draws air from the cooking compartment and discharges air into the air distribution chamber in a plane generally parallel to the plane of the conveyor. A pair of plenums in the cabinet adjacent one edge of the conveyor deliver air from the distribution chamber to a plurality of air dispensing ducts communicating with the plenums on opposite sides of the conveyor for dispensing air onto opposite sides of the conveyor.
