The present invention comprises a rotary drive nozzle die machine for use with at least first and second dough extruders. The machine includes at least one rotatable nozzle having at least two openings for extruding at least two strands of dough therethrough, a first compression head for directing a first flow of a first type of dough under pressure from the first extruder toward the at least one rotatable nozzle and a second compression head for directing a second flow of a second type of dough under pressure from the second extruder toward the at least one rotatable nozzle. A mixing chamber is connected to the first and second compression heads for receiving the first and second flows of dough, for mixing the second dough into the first dough and for directing the mixed dough to the at least one rotatable nozzle and a drive assembly rotates the at least one nozzle whereby the at least two strands of the mixed dough extruded through the at least two openings of the at least one nozzle are spiral wound together to form a single dough stream.

An extrudate cutting apparatus including a generally cylindrically shaped shaping die having an upper surface and a lower surface with an eccentrically positioned opening extending therebetween. The opening releasably receives an orifice fitting for permitting extrudate to pass from the fitting through the opening. A generally tubular housing rotatably receives the shaping die therein. A nozzle knife is integral with the housing and is in facing relation with the lower shaping die surface. The knife includes an aperture for allowing extrudate passing from the orifice fitting to pass therethrough unimpeded when the aperture and the shaping die opening are in registry. A reciprocating bar is provided for imparting rotational movement to the tubular housing for moving the housing between an open position wherein the shaping die opening and the aperture are in registry and a closed position wherein the shaping die opening and the aperture are completely out of registry to prevent any of the extrudate from passing through the aperture. In this manner, the aperture severs the extrudate passing through the opening as the housing moves from the open to the closed position.

The second sheet of dough is positioned in facing engagement on the first sheet of dough to form a laminate of dough, wherein the first and second grain directions are positioned generally not parallel with respect to each other. The present invention is also directed to the apparatus and method used for producing the above-described bakery product.

A tunnel-type conveyor oven having two types of heat sources is provided. The oven includes a conveyor for carrying items through the oven along a conveyor path. The conveyor has first and second opposite sides. A plurality of radiant heaters are located transverse to and extend across the conveyor path. The radiant heaters are spaced apart in a direction of the conveyor path. Each radiant heater includes an inner tube having a wall with a plurality of openings defined therethrough, an open first end and a second end. A burner is directed into the open first end of the inner tube. An outer tube is located around the inner tube. The outer tube has an outer surface which is adapted to radiate heat, a first end and a second end. An exhaust outlet is located on the second end of the outer tube. The radiant heaters are arranged such that with every other heater, the burners are located on the first side of the conveyor, and with the remaining heaters, the burners are located on the second side of the conveyor for uniform radiant heat distribution across the conveyor. An exhaust manifold is connected to the exhaust outlet of at least one of the heaters. A penthouse chamber is located above the plurality of radiant heaters, and the exhaust manifold is connected to the penthouse chamber. A convection heating system is also provided which includes an upper convection heater located above and extending across the conveyor path. The upper convection heater has an upper plenum with supply areas located between each of the radiant heaters. The supply areas each have a plurality of openings directed toward the conveyor path. A lower convection heater is located below the conveyor path and includes a lower plenum having a plurality of openings directed toward the conveyor path. A convection air manifold is connected between the penthouse chamber and the upper and lower plenums to deliver the products of combustion from the radiant heaters collected in the penthouse chamber to the upper and lower plenums to provide convective heat along the conveyor path.
