摘要： The present apparatus relates to cleaning means for a roller conveyor employed in a fruit and vegetable peeling operation, for example, in the peeling of white potatoes employing a lye treatment followed by the application of infrared radiant heat. The rollers which carry and turn the potatoes under the infrared rays become coated with a paste-like substance as the infrared rays take effect in conditioning the activating lye and conditioning the skin for removal, and these rolls are subjected to a cleaning operation by blade means.

摘要： The present apparatus relates to the peeling of fruit and vegetables, potatoes, for example, wherein the potatoes are first subjected to lye, then to an infra-red treatment to activate the lye with respect to the peel, defects, and eyes of the potatoes. The treated loosened peel, defects, and eyes are then removed from the potatoes. These potatotes are subsequently washed and treated in a sulfite tank, and are used in frozen mashed potatoes, frozen French-fried potatoes, etc.

摘要： A continuous dry blanching process as a preliminary to freezing operation with vegetables such as spinach, green peas, carrots, green beans, etc., is provided. The process employs a recirculating substantially oxygen-free gaseous heating medium which is heated to a temperature above 212o F. and which is formed from the products of combustion and includes steam as a moisture medium. In the treating zone the medium provides a fluidized bed of the vegetable being blanched. The process and apparatus provides for a substantial saving in time in the blanching operation, it saves more of the product and its content as far as minerals, vitamins and nutrient constituents are concerned, and it produces no residue or substantially no residue which has to be passed into a stream or into the sewer system.

摘要： The processing apparatus is adapted to work on washed and cleaned field run fresh vegetable articles such as sweet potatoes, for example, wherein the potatoes are first graded for diameter and separated, for example, into three diameters, and each of the three diameter groups is then separately subjected to a length grading step to sort to four length sub-groups including the extra large sweet potatoes, for example, that go over the end of the conveyors. Each length subgroup is then placed on a feeding and cutting device such as a shuffle feed mechanism wherein the potatoes are arranged in rows as they are being fed along, and in certain rows adjacent the end of the shuffle feed there are formed article centering pockets or recesses and the potatoes are fed through slicing knives and cut into segments. The respective segments are placed in different conveying positions, and the discharge from each subgroup of the various sized groups by diameter are again mingled, and the potatoes are carried to a canning position or a processing position of some sort.
