    摘要: A plate assembly for improved removal of volatiles from a flowable material. The assembly includes one or more sets of port-type heat exchanger plates arranged in succession to provide a confined tortuous path of increased capacity for a high velocity flow of the volatiles-containing material. Variation of the gasketing of the plates, so as to include in the tortuous path the optimum number and combination of plate ports, provides increased capacity, while affording control of flow conditions within the assembly in correspondence with the sensitivities of the flowable material. One form of the assembly may constitute a plate contactor for effecting two-phase stripping of volatiles from the flowable material. Another possible form may be a plate evaporator for enhancing evaporative removal of the volatiles.

The basic contact points on the standard plate are provided by a herring-bone pattern of V-shaped hill and valley corrugations and, preferably, the further contact points are formed by stamping the plate so that portions of the hill structure of the corrugations are provided with reversed hill and valley formations, although they may be formed by studs or projections attached to the plate.

    摘要: In the embodiments of the invention described herein, a liquid such as gelatin or an egg constituent having heat degradation or fouling tendencies is concentrated by passing it through a platetype heater while maintaining sufficient pressure to prevent boiling and keeping the temperature of the liquid below the temperature at which the liquid thermally degrades or tends to foul the heating surfaces. The heated liquid is thereafter passed through an unheated portion of the plate heater at reduced pressure, allowing vapor to form, and creating a homogeneous mixture of concentrated liquid and vapor. The concentrated liquid is extracted in a separator, and in the case of egg, may be frozen or spray dried.
