Abstract:
The invention relates to a device for cutting frozen pieces of meat. According to the invention, provision is made for continuously cutting these pieces of meat in a rotating set of cutters with minimum heat absorption and minimum possible emulsification to achieve a grain size of 2 to 8 mm.
Abstract:
Producing a confection from seed vessels, by forming a mixture of sugar and cimminuted seed vessels, directly introducing steam into this mixture to heat it-to at most 120.degree. C. and kneading to develop a throughly mixed mass. Subsequently the mixed mass is cooled to 50.degree. C. and fashioned into a confection.
Abstract:
A process for producing pumpable foodstuffs, wherein raw foodstuffs such as raw cheese is pre-comminuted, mixed with further ingredients, thermally treated by steam injection, subsequently cooled and creamed or emulsified and then fed or passed to a further working or processing operation. The present invention further relates to an apparatus for producing pumpable foodstuffs, such as processed cheese, having a treatment apparatus for raw foodstuffs, a mixer, a device or unit for heating and subsequently cooling the cheese mass and having feed pumps for the cheese mass.
Abstract:
A cutting device of an apparatus for comminuting food products has two cutting rings located concentrically to one another and rotatable relative to one another about a common axis, so that an annular slot is bounded therebetween. The cutting rings have a plurality of axially extending teeth formed between axially extending slots, and the teeth of at least one cutting ring carry cutting members of hard alloy. Each of the cutting members of this one cutting disc completely overlaps a front surface of a respective one of the teeth and has two axially extending edges facing toward the annular slot between the cutting rings. One of these edges is a cutting edge, whereas the other of these edges forms, together with the cutting edge of a circumferentially adjacent tooth, a cutting gap.
Abstract:
A kitchen appliance for the mincing or shredding of cooked pieces of beef for the preparation of corned beef includes an upwardly open bowl of substantially round cross-section and an upwardly protruded tool shaft which extends centrally thorough a bottom portion of the bowl and can be driven at high speed by a power source underneath the bowl bottom. On the tool shaft there is fixed a chopping tool having radially outwardly extending blades. The blades are arranged at different relative heights.
Abstract:
A stationary bowl of the apparatus has a bottom wall, and the upright drive shaft of a motor located beneath the bottom wall extends through the same and into the interior of the bowl. A tubular member surrounds the drive shaft out of contact with the same; the other open end of the tubular member is downwardly spaced from the upper end of the drive shaft and the lower end of the tubular member is welded to a tubular collar of a support ring located beneath the bottom wall and extending into the interior of the bowl through the bottom wall outside the tubular member. A second tubular member is placed from above over the shaft and the first tubular member, surrounding the first tubular member with clearance. Cooperating engaging portions at the upper end of the shaft and within the second tubular member engage one another so as to connect the second tubular member with the shaft for joint rotation. The lower end portion of the second tubular member is formed or provided with transversely projecting tool portions, such as comminuting or mixing blades.

Abstract:
The invention relates to a machine for the processing of foodstuffs or for the preparation of liquid or pasty pharmaceutical and chemical products, with a bowl, through the bowl bottom of which there leads a motor shaft, protruding perpendicularly into the bowl, of a motor arranged underneath the bowl, and with a shaft seal sealing off the motor shaft vacuum-tightly from the bowl bottom.A cap-shaped seal support is pushed onto the free end of the motor shaft and resets underneath the fitted bowl on a shoulder of the motor shaft and engages at a clear distance labyrinth-like with a lower peripheral cap rim over a stationary housing ring enclosing the motor shaft. The seal support is pushed over and contacts an O-ring which lies in an annular groove of the motor shaft. In the upper section of the seal support, a V-ring is loosely inserted as a sealing ring, and encloses the shaft passage in the bowl bottom with an upper V-member. With fitted bowl, the V-ring is seated under radial prestress vacuum-tightly on the motor shaft and bears with its upper V-member under axial stress against the underside of the bowl bottom.
Abstract:
The invention relates to a universal machine for the comminution, cutting, mixing, kneading, emulsifying, etc., of foods. The machine comprises a bowl with a circular cross section. The bowl according to the invention is supported on a supporting stand, and may be tipped around a tilting axle arranged horizontally under the bottom of the bowl. The bowl may be arrested in any desired tipped position. The machine further comprises a closable lid, a plurality of centered, rotating tools mounted on a tool shaft, and a motor for driving the tools disposed under the tilting axle and flanged onto the bottom of the bowl. Switching means for the motor are provided laterally on the machine. To simplify the handling of the machine and facilitate its cleaning, the switching means are housed in a control box which functions as a component of a stand for the bowl. The control box also contains the bearing for one end of the pivot axle and the electric lines to the motor.
