A beverage sterilisation device comprises a housing defining an inner space, and having a first and a second end. An electrically insulated fluid path-defining conduit extends through the inner space from the first end to the second end. A first electrode has a first part positioned adjacent to the fluid path and a second part extending perpendicular to the first part. A first counter electrode defines together with the first electrode a first capacitor, and a second electrode having a third part and a fourth part. The third part is positioned adjacent to the fluid path, and the fourth part extends substantially perpendicular to the third part. A second counter electrode defines together with the second electrode a second capacitor. The first counter electrode and the second counter electrode are short-circuited by an electrical connection, and a conductive device is electrically connected between the first electrode and the second electrode. A first trigger point is defined at the second part and remote from the first part, and a second trigger point is defined at the first counter electrode opposite to the first trigger point. The device further comprises an electrical activation circuit for short-circuiting the pair of trigger points and for causing an electric field to propagate from the first trigger point and along the fluid path.

Apparatus for continuously pasteurizing liquid by continuously flowing the liquid within a high electric field, comprises a body of electrical insulator material forming a wall, opening portions formed in the wall body as passages for the liquid therethrough, at least a pair of electrode wires laid across the opening portions, and a mechanism for applying an alternating current voltage across the pair of electrode wires. Joints and pipes may be connected to the wall body and together with the opening portions define a fluid passage through which the liquid continuously flows for being pasteurized. A method of continuous liquid pasteurization using the apparatus involves applying an alternating current voltage between the pair of electrode wires under the conditions of 2000.ltoreq.H/d.ltoreq.200 where d (mm) is the distance between the wires and H (volt) is the voltage applied thereacross, and such that the liquid is heated.

A method of treating consumable liquids, the liquids so produced, and an assembly for practicing the method. Consumable liquid is passed through a magnetic field having properties effective to enhance the flavor of the liquid, the field preferably being established by a permanent magnet establishing a continuous polarity on opposite sides of the liquid with a minimum magnetic field strength of about 3000 Gauss. The assembly for treating the liquids may include first and second tubular permanent magnets having opposite radially spaced first and second pole portion of opposite polarity, a pair of pole pieces received between the pole portions, and in encasement for maintaining the magnets and pole pieces together so that a fluid flow path is defined through the magnets and a predetermined gap established by the pole pieces, and so that the pole portions of the same polarity for each magnet are on the same side of the flow path.

The present invention relates to a process for fast and homogeneously heating a liquid product to a predetermined temperature by means of resistive heating. Sufficient and effective microbial inactivation is achieved upon applying an electrical field strength of between 0.1-5.0 kV/cm for a prolonged period of time, thus by selecting a relatively low electrical field strength and a pulse duration of at least 10 microseconds while the maximum temperature of the liquid product autonomously remains below 92° C. during the resistive heating. The present invention further relates to said process wherein the liquid product is pre-heated prior to subjecting the liquid product to the process. The present invention also relates to the liquid product obtainable by the process according to the invention.
