Abstract: An aqueous antimicrobial composition is made with a low odor that has (a) a first volatile carboxylic acid, (b) a second non-volatile carboxylic acid, (c) a first percarboxylic acid, (d) a second percarboxylic acid, and (e) hydrogen peroxide. The molar ratio of the sum of the first carboxylic acid and the first percarboxylic acid to the sum of the second carboxylic acid and the second percarboxylic acid is from 1:5 to 5:1, preferably from 1:3 to 3:1. Processes are developed for producing the composition and sanitizing various surfaces with it.

Abstract: A system for preserving red meat by plasma active water (PAW) vacuum packaging includes a solution mixing tank, a plasma treatment chamber, an atomization spray module, a conveyor bell, a water circulation module, and a vacuum packaging module. The solution mixing tank, the plasma treatment chamber, the atomization spray module, and the water circulation module are sequentially connected through pipes. The atomization sprav module is configured to spray PAW onto the red meat on the conveyor belt, and the vacuum packaging module is configured to vacuum-package the red meat. Utilizing PAW improves the antibacterial ability of vacuum packaging while enhancing the color stability of red meat, greatly extending the shelf life of red meat, thereby preserving red meat in a green and economical way.

Abstract: A capture unit for use with an antimicrobial application unit may include an upstream filter and a downstream filter. The upstream filter may be positioned to receive effluent from the application unit and to filter solid components from the effluent. The resultant upstream effluent filtrate may then be passed downstream to the downstream filter. The downstream filter may be used to filter an antimicrobial component from the upstream effluent filtrate and the resultant downstream effluent filtrate may be suitable for disposal as wastewater discharge. The antimicrobial is preferably a quaternary ammonium compound, is more preferably an alkylpyridinium chloride, and is most preferably cetylpyridinium chloride.

Abstract: Described herein is an antimicrobial composition used in produce, poultry, and meat processing. The composition includes an alkylpolyglycoside having a formula: R—O-(G)n-H, where n is 1 to 2, G is a saccharide residue having 5 to 6 carbon atoms, and R is an alkyl group such that the alkylpolyglycoside has an average alkyl chain length of from 8-14. The alkylpolyglycoside is present in an active amount of from 0.01 to 8 weight percent based on a total weight of the composition. The composition also includes an antimicrobial agent chosen from organic acids, mineral acids, cetylpyridinium chloride, elemental silver and/or silver salts, and combinations thereof. The antimicrobial agent is present in an amount of from 0.002 to 2.5 weight percent based on the total weight of the composition.

Abstract: A chiller bath includes a tank for holding a volume of chiller water; a dosing system for dosing a first solution and a second solution into the chiller water, arranged to create a plurality of zones within the volume of water, wherein each zone has a higher concentration of either the first or the second solution than surrounding portions of the volume of water; and a meat or poultry immersion arrangement for immersing and moving carcasses in the chiller water. A method for reducing bacterial load on meat or poultry includes generating a plurality of zones within a chiller bath containing water by dosing a source of alkalinity and antimicrobial into the water, wherein the plurality of zones comprises at least one alkaline zone with a pH above 8.5, and at least one antimicrobial zone with pH below 8.5; and submersing meat or poultry in the bath. The zones can also be generated using spray nozzles in a meat or poultry operation.
